Job Description
Key Responsibilities
Kitchen Equipment Maintenance
Maintain, service, and repair all kitchen equipment including:
Cooking ranges, ovens, combi ovens, fryers, grills
Refrigerators, freezers, blast chillers
Dishwashers, hood & exhaust systems
Conduct preventive maintenance as per schedule and manufacturer guidelines.
Attend breakdown calls promptly to minimize operational downtime.
Coordinate with Culinary team during repairs to ensure food safety compliance.
Ensure proper calibration and safe operation of equipment.
Laundry Equipment Maintenance
Maintain and repair laundry equipment including:
Washing machines, dryers, hydro extractors
Flatwork ironers, presses, steam generators
Monitor steam lines, water supply, drainage, and electrical connections.
Carry out preventive maintenance to extend equipment life and reduce breakdowns.
Support laundry operations during peak occupancy periods.
Safety, Compliance & Documentation
Follow all resort safety procedures, LOTO (Lock-Out Tag-Out), and PPE requirements.
Ensure compliance with HACCP, hygiene, and fire safety standards.
Maintain accurate maintenance records, job cards, and spare parts usage.
Report recurring faults and recommend equipment upgrades or replacements.
General Duties
Support other engineering tasks when required (multi-skilling).
Coordinate with suppliers and contractors under supervision.
Maintain cleanliness and organization of workshops and plant rooms.
Participate in emergency response and island safety drills.
Qualifications
- Technical certification or diploma in Mechanical, Electrical, or Refrigeration Engineering.
- Minimum 2–3 years’ experience in a hotel or resort environment (Maldives experience preferred).
- Strong knowledge of:
Commercial kitchen equipment
Industrial laundry machines
Basic electrical, plumbing, and mechanical systems
Ability to work independently in a remote island setting.
