Job Description
Reporting to the Resort General Manager, you will lead the Food and Beverage team through front of house operations and events, delivering an exceptional experience for every guest, every time.
Thanks to an internal promotion, this opportunity has opened up for a passionate Food & Beverage leader to step in and make their mark.
At Darlington Beach Resort, this isn’t just about operations, it’s about creating memorable moments. From buzzing bistro service to relaxed café vibes and large-scale events, you’ll lead from the front, working closely with the Head Chef and leadership team to create a Food & Beverage experience that keeps guests coming back.
Key accountabilities include:
- Deliver an exceptional dining experience that drives rave reviews, repeat visitation and guest loyalty
- Partner with the Head Chef, Resort Leadership and Events team to create standout outlets, menus and functions
- Build and lead a high-performing, engaged team culture focused on quality, service and fun
- Take ownership of the Food & Beverage product, identifying opportunities to innovate and elevate the guest experience
You will also:
- Develop and manage rosters aligned to business demand, wage targets and event requirements
- Manage supplier relationships and ordering as required
- Oversee conference & events service delivery, including set-up and sequencing as needed
- Maintain strong communication with the Resort Manager to ensure seamless operations across departments
- Lead regular team briefings to align on upcoming events, service delivery and department goals
- Proactively manage risks and hazards to maintain a safe working environment
- Ensure compliance with Food Safety legislation and company standards
- Oversee RSA compliance and maintain certification registers across the team
What you’ll bring
- Proven experience in a senior Food & Beverage role within a Hotel, Resort, Restaurant, Bistro, or high-volume hospitality venue, ideally with events exposure
- A natural leader with strong communication skills and the ability to energise, coach and inspire your team
- A passion for delivering exceptional guest experiences and continuously improving service standards
- Strong commercial acumen with experience managing labour, costs and operational performance
- Confidence navigating busy, fast-paced environments where no two days are the same
- A hands-on approach. You lead by example and aren’t afraid to roll up your sleeves
- A genuine enthusiasm for creating a positive team culture and unforgettable guest moments
