SUMMARY

The Director of Outlets will oversees both outlets. 

The Director of Outlets works closely with the Managing Director to monitor the effectiveness of the services and products offered and adjust accordingly to ensure maximum profitability and budget efficiency of the outlets. 

RESPONSIBILITIES

  • Responsible for the quality of food, beverage and guest service of the outlets

  • Achieve budgeted food sales, beverage sales, labor costs and overall F&B profitability through effective management and support of the F&B Outlet Managers

  • Hire, supervise, coach, discipline and conduct performance evaluations for direct reports and outlet staff

  • Establish continuous training and development of the F&B Outlet Managers and oversee and support line staff training programs

  • Ensure all outlet staff are fully trained in their job functions

  • Proactively recruit and hire outlet staff when and where necessary 

  • Foster and promote a cooperative working environment, maximizing productivity and staff morale

  • Review daily sales and resolve discrepancies with Accounting

  • Track revenue against budget

  • Prepare weekly schedules in accordance with staffing guidelines and the labor forecast

  • Compare daily labor costs against forecasted costs to ensure the labor cost percentage is met

  • Assign work and side duties to staff in accordance with departmental procedures

  • Communicate additions or changes to the staff assignments as they arise throughout the shift

  • Conduct pre-shift meeting with staff and review all information pertinent to the day’s business

  • Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving

  • Maintain consistent knowledge of house accounts and arrivals

  • Monitor the preparation of station assignments, ensuring compliance to departmental standards

  • Inspect, plan and ensure that all materials and equipment are in complete readiness for service

  • Inspect all aspects of the outlet’s environment ensuring compliance with standards of cleanliness and order and rectify all deficiencies

  • Ensure that specified amounts of menus and wine lists are available and in good condition for each meal period

  • Ensure line employees are in properly maintained and appropriate uniform dictated by position 

  • Monitor and handle all guest complaints

  • Ensure that all staff closing duties are complete before staff sign out

  • Complete work orders for maintenance repairs and submit to Engineering

  • Prepare and submit daily payroll costs and weekly payroll 

  • Work in conjunction with DOFB and Marketing Manager to remain current on marketing initiatives

  • Drive new marketing initiatives to create new revenue streams and expand existing programs

  • Create quarterly Game plans and track progress by weekly and monthly management meetings

  • Assist with preparing and implementing standard operating procedures

 

SUPPORTING FUNCTIONS

In addition to the core focus and responsibilities, the candidate is expected to complete the following duties:

  • Expedite on the floor and in the kitchen as business demands

  • Attend hotel operational meetings as needed

  • Negotiate purchase prices and develop preferred suppliers

  • Identify and evaluate competitor set

  • Keep up with new and emerging trends in the restaurant industry

  • Knowledge of safety initiatives in compliance with OSHA guidelines
