Job Description
The House of Commons’ Parliamentary Precinct Operations (PPO) is currently looking to staff the Station Chef position.
PPO is responsible for providing efficient and modern operational services to Members of Parliament and the House Administration while ensuring a functional work environment. This includes but not limited to the provision of services such as food services.
Food services provide various hospitality services to Parliamentarians and their staff, House Administration employees and visitors to the Hill. These services are offered by the Parliamentary Dining Room and cafeterias located in different buildings on the Hill. Food services also provide a full catering service for a variety of functions ranging from a simple coffee service to the complexities of a banquet.
The Station Chef is responsible for the leadership and coordination of operations and oversight of a team within an assigned area of food preparation to support areas of operations within the Food Production Facility and the Main Kitchen. This includes the timely delivery of high-quality haute cuisine, cafeteria meals and other food products that maintain Food Services' reputation for excellence and ensure high client satisfaction levels within a healthy, clean and secure environment in alignment with industry best practices.
Note: This activity may be located at either the Food Production Facility or on the Parliamentary Precinct. There are some differences in the requirements of the two locations; however, the incumbent will be expected to move fluidly between the two locations in order to deal with fluctuations in demand, seasonal requirements etc. The Station Chef role can include either hot or cold food production duties as either Garde Manger, (cold menu items) or Saucier, (preparing, rethermalizing, finishing, garnishing and expediting hot meal production) Banquets or Butchery.
According to operational requirements, the person will be required to work shifts, long or irregular hours or weekends.

Qualifications
Education :
- Designation of the Certification of Qualification (equivalent to Red Seal certificate) TQ5 or industry equivalent OR an acceptable combination of education, training and relevant experience;
- Completion of a basic health and safety course and certification under the Food Safety Enhancement Program (FSEP).
Experience :
- Minimum of one (1) year of experience supervising employees (comprised of cooks, apprentices, kitchen helpers and dishwashers);
- Minimum of three (3) years of experience working in a garde-manger (cold food production) and/or butchery environment and in a live kitchen preparing, tasting and expediting meals, OR a minimum of three (3) years of experience working in a restaurant or production kitchen environment with a similar service profile to that of the Parliamentary Dining Room;
- Experience in the operation of specialized equipment such as combi oven technology, thermal bath circulators, smokers, dehydrators, induction cooking technology, as well as standard kitchen equipment typically found in hotel and restaurant kitchen environments;
- Experience and skill in assessing food quality standards.
