WHAT'S THE JOB?

The Baker/Breakfast Cook contributes to the overall success of the culinary team by getting our guests started each day with a hearty breakfast. Working overnight, the Breakfast Cook/ Baker is responsible for producing all required items as per contract scope daily, while maintaining a clean and enticing display of products during service. The Breakfast Cook/Baker will demonstrate strong organizational and time management skills. This posting is intended to build a pool of qualified candidates for future opportunities. The position involves a remote work lifestyle in a camp setting with the following amenities:

  • All meals and accommodations are provided 
  • Travel is provided to and from the site locations from designated locations in the Thunder Bay, Dryden and surrounding area
  • Private room with cable television 
  • Access to Wi-Fi 
  • Access to laundry facilities and detergents 
  • Access to a gym and common areas 

Key responsibilities include:

  • Maintaining a safe working environment at all times
  • Following all safety controls related to Covid including regular handwashing, proper use of PPE and enhanced cleaning/sanitation requirements
  • Providing excellent and consistent service for all guests using the KDR facilities
  • Maintaining a clean and organized workstation throughout the shift
  • Preparing all breakfast items efficiently, as required. Items include, but are not limited to:
    • Eggs, prepared to order, feature items (Eggs Benedict, Breakfast Burritos, Feature Omelets and other preparations with eggs)
    • Bacon, pork or beef sausage, ham, and other meats
    • Quick breads (pancakes, muffins, biscuits, fritters) and other sweet and savory preparations such as French toast
    • Baked beans & hot cereals
    • Some scratch baking (cookies, squares, bars etc.)
    • Some pre-fab baking
  • Ensuring that food safety requirements are being followed
  • Completing all HACCP and Production logs as required
  • Labelling and dating of all products prepared for service as required
  • Oversight of sandwich maker (ie. Production and quality) and Front-of-House stocking during breakfast service.
  • Removing all used pots, pans, utensils, etc., to ware washing area
  • Performing end-of-shift cleaning, sweeping, and mopping of workstation
  • Completing all weekly and monthly cleaning tasks as scheduled
  • Removing garbage from workstation as required
  • Receiving and storing all supplies (food, beverage, chemical and paper/disposable)
  • Assisting with any other tasks as assigned by supervisor
  • As night shift lead, the Breakfast Cook/Baker is required to direct and assist sandwich makers and GH’s with their tasks as necessary to ensure breakfast service and lunch are at full scope throughout the duration of shift, the kitchen and dining room are maintained in a clean and orderly fashion, and provide a positive experience for guests and colleagues.

Additional responsibilities:

This position includes supervisory responsibilities including monitoring operations and team member’s performance during the shift. All issues where progressive discipline would apply must be discussed with the Executive Chef, Executive Sous Chef or Sous Chef, depending on availability. Issues must be addressed in a timely manner, preferably no later than the end of the shift so that any disciplinary action is carried out as close in time to the issue as possible.

Qualifications

WHO ARE WE LOOKING FOR?

  • Previous experience providing a hot breakfast service in high volumes is required
  • Experience with producing baked goods (scratch baking and/or pre-fab items) in high volumes is required
  • Current Food Safe certificate is required
  • Large-scale cooking and baking experience in camp settings, banquet halls and/or hotels is a strong asset
  • Red Seal or other certifications is an asset
  • Experience in accurately producing weekly inventories
  • Previous supervisory experience is an asset
  • A team-player who is committed to providing client satisfaction
  • Must have valid government issued photo ID for travel to site
  • Must be able to successfully pass a Criminal Background Check
  • Be able to handle the following physical demands:
      • Lift, carry, push, or pull up to 50 lbs
      • Climb ladders or stairs
      • Stand, walk, squat, kneel or sit according to task for extended lengths of time
      • Perform repetitive hand work requiring full use of both hands
      • Perform work with arms at full length
      • Work with arms above shoulder height

Work schedule and remuneration: 

Baker/Breakfast Cooks work on a rotational schedule of 2 weeks on/2 weeks off. Site locations are in remote settings, requiring either air travel to site, or via ground on our shuttle. You may be required to work nights, weekdays, weekends, and general holidays. Wages are paid on an hourly basis with a starting rate of $22.48 per hour.
