Job Description
We are seeking a talented and experienced Sous Chef to join our culinary team at our luxury resort in {NAME}, Maldives. As the second-in-command in our kitchen, you will play a crucial role in maintaining our high standards of culinary excellence while embracing the unique flavours and ingredients of our tropical island setting.
- Assist the Executive Chef in overseeing daily kitchen operations, ensuring efficiency and maintaining quality standards
- Collaborate with the culinary team to develop innovative menus that showcase local and international cuisines
- Supervise and mentor kitchen staff, fostering a positive and collaborative work environment
- Ensure compliance with food safety regulations and maintain the highest standards of hygiene and cleanliness
- Manage inventory, control costs, and minimise waste while maintaining quality
- Participate in menu planning, considering seasonality and availability of local ingredients
- Assist in the preparation and presentation of dishes during service times
- Coordinate with other departments to ensure smooth kitchen operations and guest satisfaction
- Contribute to the continuous improvement of culinary offerings and kitchen processes
- Step in for the Executive Chef when necessary, demonstrating leadership and decision-making skills
Qualifications
- Minimum of 3 years' experience in the hotel industry, preferably in luxury resorts or remote island locations
- At least 1 year of professional experience in a similar Sous Chef position
- Middle or Secondary Education with additional training or certificates in culinary arts
- Valid food handler certificate (mandatory)
- Demonstrated culinary expertise and creativity, with knowledge of various cuisines and cooking techniques
- Strong organisational skills and meticulous attention to detail
- Excellent leadership and team management abilities
- Proficiency in menu planning, cost control, and inventory management
- Outstanding communication skills and ability to work collaboratively in a diverse team
- Thorough knowledge of food safety regulations and best practices
- Ability to thrive in a fast-paced, high-pressure environment
- Flexibility to adapt to the unique challenges of a remote island setting
- Passion for continuous learning and staying updated with culinary trends
- Proficiency in English; knowledge of additional languages is an advantage
