Job Description

DUTIES AND RESPONSIBILITIES

 

  • Supervise kitchen staff and culinary operations for assigned shifts, assisting the Outlet Chef in managing employees, facilities, and costs to maximize Food and Beverage department profit.
  • Prepare and produce high-quality sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Monitor and maintain quality levels of production, presentation, guest satisfaction, cleanliness, sanitation, and hygiene in the kitchen area.
  • Conduct formal and on-the-job training sessions for kitchen employees to ensure optimal performance.
  • Communicate effectively with all levels of management and employees, providing daily updates to the Outlet Chef on operational and personnel matters.
  • Assist in inspecting physical aspects of kitchen areas, cold rooms, and equipment, ensuring proper maintenance and functionality.
  • Provide hands-on supervision and assistance in all kitchen areas as assigned by the Chef.
  • Perform related duties and special projects as required.

 

Qualifications

Candidate Requirements :

  • At least 2-3 years as Sushi Specialist in an established high quality, high-volume, and fast-paced operations.
  • Internationally recognised Degree or Diploma in Culinary Arts or related field.
  • Experience in food cost management and inventory control.
  • Experience in a Japanese or Pan Asian restaurant is a requirement.
  • Should come from a luxury hotel or restaurant background specialising in producing Sushi, Sashimi and Japanese style “crudo” and other appetizers.
  • Expertise in cutting, slicing, and filleting different types of fish.
  • Proficient in preparing and presenting a wide variety of sushi rolls, nigiri, and sashimi.
  • Strong knowledge of Japanese cuisine, ingredients, and culinary techniques.
  • Excellent knife skills and ability to maintain kitchen equipment.
  • Understanding of food safety and hygiene regulations, with relevant certifications (e.g., Food Hygiene Certificate).
  • Ability to work in a fast-paced environment and handle high-pressure situations.
  • Strong leadership and team management skills.
  • Excellent communication skills in English.
  • Flexibility to work varying shifts, including evenings, weekends, and holidays.
  • Passion for culinary innovation and staying updated with current food trends.
