Job Description
Lead Strategic Procurement. Protect Every Margin. Shape the Future of a Sydney Icon.
Reporting to the Director of Finance, you’ll own the hotel’s procurement function end-to-end. From daily F&B purchasing to CAPEX sourcing and major supplier contracts, you'll ensure every dollar spent delivers optimal price and quality.
Leading a team of three Purchasing Officers and Storepersons across a four-outlet Food & Beverage operation and high-volume conference and events hotel, you'll be a hands-on leader — coaching your team, managing key supplier relationships, and ensuring every purchasing decision reflects genuine commercial rigour.
This is a highly visible role where your commercial decisions directly influence hotel performance, operational efficiency and the quality of the guest experience.
Key Responsibilities
- Lead procurement and category management across food, beverage, general goods and CAPEX.
- Drive cost optimisation and delivering agreed annual and category-level savings targets.
- Manage key supplier relationships, contracts, renewals, rebates and performance agreements.
- Lead and develop a high-performing team of three across Purchasing and Stores.
- Oversee inventory, PAR levels and stock takes across four Food & Beverage outlets and major events.
- Monitor and manage supplier performance through regular reviews, scorecards and corrective action.
- Ensure robust financial controls and compliance, including three-way matching and variance investigation.
- Oversee loading dock and receiving operations to ensure accurate, secure and efficient goods-in processes.
- Partner closely with Finance, F&B and Accor Purchasing to secure the best combination of price, quality and service.
Qualifications
About You
You're an experienced procurement professional who enjoys developing people as much as driving commercial results. You build trusted supplier relationships, bring analytical curiosity, and know how to balance strategic category thinking with hands-on, ordering-floor leadership. You thrive in a luxury environment where accuracy, governance and genuine service are non-negotiable.
You'll also bring:
- Demonstrated leadership experience in hotel or hospitality procurement, purchasing or supply chain management.
- Proven success driving cost savings, category strategy and supplier performance.
- Strong negotiation and contract management skills.
- Outstanding people leadership, coaching and team development capability.
- Excellent written and verbal communication skills.
- Exceptional organisational skills with strong attention to detail and accuracy.
- Advanced knowledge of Purchase Plus, Micros and Microsoft Excel.
- The ability to manage competing priorities under pressure while maintaining compliance.
- A collaborative leadership style with a commitment to continuous improvement.
