Job Description
We are seeking an experienced and motivated Sous Chef to support the leadership of our culinary operations across the hotel, including restaurant service and high-volume banqueting.
This is a key leadership role for a passionate chef who thrives in a fast-paced, high-standard environment and takes pride in delivering consistent, high-quality dishes across all service styles.
Working closely with the Executive Chef and broader culinary leadership team, you will support daily kitchen operations across Coco’s Kitchen + Bar, in-room dining, and a wide range of conferences, weddings, and special events. You will play a key role in maintaining standards, driving consistency, and supporting the development of the kitchen team.
Key responsibilities include:
- Support the day-to-day operation of all kitchen sections across restaurant and banquets
- Ensure consistent delivery of high-quality dishes across all service periods
- Assist with menu execution, production planning, and service coordination
- Maintain food cost control, stock management, and kitchen efficiency
- Lead, mentor, and support kitchen team members during service
- Ensure compliance with food safety, hygiene, and HACCP standards
- Work collaboratively with the culinary team to ensure smooth, efficient service delivery
Qualifications
We are looking for a skilled and motivated culinary professional ready to step into a strong leadership support role in a high-performing five-star kitchen.
- Trade qualification in Commercial Cookery
- Proven experience as a Sous Chef or Senior CDP in a hotel, resort, or high-volume kitchen
- Strong leadership and team support skills
- Experience across à la carte and banqueting service
- Strong organisational and time management skills in a busy environment
- Solid understanding of food safety and kitchen compliance standards
- Creative, detail-focused approach with a passion for quality and consistency
- Flexibility to work a rotating roster including evenings, weekends, and public holidays
