Job Description
Key Responsibilities
Wine Program & Curation
- Develop and maintain an exceptional, globally inspired wine list aligned with each outlet concept (restaurants, bars, banquets).
- Ensure a balanced portfolio across Old World and New World wines, including premium, rare, and boutique labels.
- Collaborate with chefs to design wine pairings and tasting menus.
Cellar & Inventory Management
- Oversee procurement, pricing, inventory control, and storage of wines.
- Maintain optimal cellar conditions and stock rotation (FIFO/LIFO as required).
- Work closely with procurement and finance for cost control and vendor negotiations.
Guest Experience & Service Excellence
- Provide expert wine recommendations and personalized guest interactions.
- Lead tableside service for VIPs and high-profile events.
- Curate bespoke wine experiences, tastings, and masterclasses.
Training & Team Development
- Train and mentor service teams across outlets on wine knowledge, service standards, and upselling techniques.
- Build a strong wine culture within the team, aligned with luxury service standards.
Revenue & Commercial Focus
- Drive beverage revenue through strategic pricing, promotions, and upselling initiatives.
- Monitor sales performance, identify trends, and optimize the wine program accordingly.
- Develop partnerships with wineries, distributors, and sponsors.
Compliance & Standards
- Ensure adherence to all legal regulations related to alcohol service and licensing.
- Maintain brand standards of Fairmont and Roswyn in all aspects of beverage service.
Qualifications
- Minimum 5–8 years of experience in luxury hotels or fine dining restaurants, with at least 2 years in a leadership role.
- Recognized sommelier certification (WSET Level 3/4, CMS, or equivalent preferred).
- Strong knowledge of global wine regions, varietals, and trends.
- Excellent communication, grooming, and guest engagement skills.
