Job Description
The Senior Beverage Manager is responsible for the strategic leadership and daily operation of all beverage outlets within a high-volume, luxury integrated resort and casino environment. This role oversees service, bars, lounges, and venue-specific beverage programs, ensuring exceptional guest experiences, operational excellence, and compliance with all regulatory standards.
The Senior Beverage Manager partners with Food & Beverage leadership to drive revenue, maintain brand standards, and cultivate a high-performing team aligned with the resort’s service culture.
Key Responsibilities
Operational Leadership
- Oversee day-to-day operations across all beverage outlets, including casino service bars, lounges, and specialty venues
- Ensure seamless execution of service standards and SOPs across all shifts and outlets
- Monitor and evaluate operational performance, implementing improvements as needed
- Manage beverage logistics including ordering, inventory, distribution, and par levels
Guest Experience & Service Excellence
- Deliver exceptional guest service, resolving escalated guest concerns promptly and professionally
- Maintain a visible leadership presence on the floor, especially during peak periods
- Ensure consistent execution of luxury service standards across all venues
Team Leadership & Development
- Lead, coach, and develop beverage managers, supervisors, bartenders, and cocktail service teams
- Oversee scheduling, staffing, and labor management to align with business volume
- Conduct performance evaluations and implement development plans
- Foster a culture of accountability, engagement, and excellence
Financial Performance
- Drive revenue growth through effective beverage programming, pricing strategies, and promotions
- Manage departmental budgets, payroll, and cost controls
- Analyze KPIs (e.g., revenue per outlet, labor %, pour cost, inventory variance) and implement corrective actions
Compliance & Risk Management
- Ensure compliance with all local, state, and federal liquor laws and gaming regulations
- Enforce responsible alcohol service, including monitoring intoxication and preventing underage service
- Maintain health, safety, and sanitation standards across all beverage operations
Strategic & Administrative Responsibilities
- Develop and execute short- and long-term departmental goals and initiatives
- Collaborate with procurement and vendors on product selection and sourcing
- Partner with marketing and nightlife teams on activations and events
- Lead departmental meetings and facilitate cross-functional communication
Qualifications
Education & Experience
- High school diploma or equivalent required; Bachelor’s degree in Hospitality, Business, or related field preferred
- Minimum 5–7 years of progressive beverage or F&B experience, with at least 3 years in a leadership role
- Experience in a luxury, high-volume resort, casino, or nightlife environment strongly preferred
Skills & Knowledge
- Advanced knowledge of spirits, wine, beer, and cocktail programs
- Strong leadership, organizational, and interpersonal skills
- Proven ability to manage large teams in a fast-paced environment
- Financial acumen and experience managing budgets and cost controls
- Proficiency in POS systems, inventory management, and Microsoft Office
Licensing & Requirements
- Must be 21 years of age or older
- Ability to obtain and maintain all required health and alcohol service licenses
