Job Description

General Summary Of Duties:

Responsible for preparation and production of quality sauces for all food outlets from the main kitchen.

Qualifications

Role and Responsibilities: (Includes but is not limited to the following)

  1. Prepare all sauces according to standard recipes to ensure consistency of product for the guest.
  2. Check and control the proper storage of product (stocks and sauces needing special attention) and portion control size.
  3. Keep all refrigeration, storage and working areas in clean, working condition to comply with regulations.
  4. Ensure all equipment in working areas is clean and in proper working condition.
  5. Prepare food from the Broiler following standard recipes to the guest's specification.
  6. Provide guest satisfaction through outstanding guest service. 

    Performance Requirements: (Knowledge, skills and abilities)

  7. Requires reading and math skill for recipes, measurements and food requisitions.
  8. Ability to read, write, speak and understand the English language in order to complete inventories and requisitions and communicate with other employees.
  9. Ability to understand written English to read any caution or safety notices.
  10. Ability to understand verbal English in case of emergency situations.
  11. Ability to read, write, speak and understand the English language to comprehend and follow written and/or verbal instructions from management, guests and other employees.
  12. Communicate with supervisor throughout the shift.
  13. Ability to perform duties within hot to normal to cold temperature ranges.
  14. Sufficient manual dexterity of hand in order to use knives and kitchen tools.
  15. Ability to operate kitchen equipment including deep fryer, broiler, oven and mixer.
  16. Ability to organize, prioritize work and meet deadlines.
  17. Adheres to control procedure for food costs and quality.
  18. Perform all assigned side work to include replenishing/restocking workstation with supplies.
  19. Check station before, during and after shift for proper set-up and cleanliness.
  20. Keep spoilage/waste to a minimum by ordering and utilizing proper quantities and rotating products/inventory.
  21. Ability to read, write, speak and understand the English language to comprehend product labeling instructions to enable the safe application of products and processes with the Hotel. 
  22. Good working knowledge of accepted standards of sanitation.
  23. "CLEAN AS YOU GO" -- Keep your workstation neat and orderly, and perform general cleaning tasks using standard hotel cleaning products, as assigned, to adhere to standards.
  24. Ability to read, write, speak and understand the English language clearly to ascertain and document important information, to follow written and/or verbal instructions and to provide clear direction/guidance.  Ability to relate to all levels of management, guests and employees in verbal/written form. 
  25. Listen & respond to guest inquiries using a positive, clear speaking voice, answer questions and offer assistance giving accurate information.
  26. Social skills as demonstrated by the ability to deal with internal/external customers, some of whom will require high levels of patience, tact and diplomacy to diffuse anger, collect accurate information and resolve problems and concerns.
  27. Social skills as demonstrated by the ability to listen and respond to employee or management inquiries/concerns using a positive, clear speaking voice, answering questions and/or offering assistance giving accurate information regarding plans, policy or procedures within guidelines.
  28. Respond to guest inquiries.  Provide guest satisfaction through assistance, direction and information within hotel guidelines.
  29. Ability to maintain attendance in conformance with standards.
  30. Ability to maintain a neat, clean and well-groomed appearance.

  31. Any combination of education, training, or experience that provides the required knowledge, skills, and abilities.
  32. Ability to obtain/renew all government required licenses or certification.
