Job Description

The Commis I – À La Carte Chef is responsible for the preparation, cooking, and presentation of menu items in the coffee shop, with primary focus on Asian cuisine and casual à la carte dishes. This role requires strong operational knowledge of wok-based cooking, short-order preparation, and consistent execution of burgers, submarines, fried rice, fried noodles, and regional specialties such as Bami Goreng.

The position demands speed, consistency, hygiene compliance, and the ability to work efficiently during peak service hours.

Key Responsibilities

  • Prepare and cook à la carte menu items, including Asian specialties (e.g., fried rice, fried noodles, and Bami Goreng) and Western-style casual items (burgers, submarines, and sandwiches).
  • Execute wok cooking techniques with proper heat control and timing.
  • Ensure all dishes are prepared according to standardized recipes and portion controls.
  • Maintain consistency in taste, texture, and presentation.
  • Coordinate with service staff to ensure timely order dispatch.
  • Set up and maintain mise en place before service.
  • Monitor stock levels and inform supervisors of shortages.
  • Minimize food wastage through efficient preparation practices.
  • Assist in receiving and inspecting kitchen deliveries.
  • Adhere strictly to food safety and sanitation standards.
  • Maintain cleanliness of workstation and equipment at all times.
  • Follow HACCP principles and company hygiene policies.
  • Ensure proper temperature control for storage and cooking.
  • Work collaboratively with other kitchen team members.
  • Support junior kitchen staff when required.
  • Communicate clearly with the head chef/sous chef regarding operational issues.
  • Maintain a professional and disciplined kitchen attitude.

Qualifications

  • Strong knowledge of Asian cuisine, especially fried rice and noodle preparations.
  • Experience in preparing burgers, submarines, and short-order café items.
  • Proficiency in wok cooking techniques.
  • Ability to work under pressure in a fast-paced coffee shop environment.
  • Good knife skills and basic butchery knowledge.
  • Understanding of portion control and cost awareness.
  • Knowledge of food safety and hygiene standards.

Qualifications & Experience

  • Minimum 2–3 years of experience in a similar role (Commis I or equivalent).
  • Experience in Asian casual dining or coffee shop operations preferred.
  • Culinary certification or relevant hospitality qualification is an advantage.
  • Basic English communication skills preferred.
