Job Description

The Chief Baker oversees the preparation, production, and presentation of all bakery and pastry items, ensuring the highest quality and consistency in line with company standards. This role involves supervising the pastry and bakery team, developing creative menus, maintaining inventory, and ensuring strict compliance with food safety and hygiene standards. The Chief Baker also plays a vital role in staff training, cost control, and innovation to delight guests with a wide range of baked goods and desserts.

Key Responsibilities

  • Supervise and lead the pastry and bakery team in daily operations.
  • Plan, prepare, and execute a variety of breads, cakes, pastries, desserts, and specialty items.
  • Design and develop new recipes, seasonal menus, and special event offerings.
  • Ensure consistent quality, taste, texture, and presentation of all bakery and pastry products.
  • Oversee production schedules to meet operational and banquet demands.
  • Monitor stock levels, control wastage, and manage inventory effectively.
  • Ensure all food safety, hygiene, and sanitation regulations (HACCP) are strictly followed.
  • Train, mentor, and evaluate team members to improve skills and efficiency.
  • Collaborate with the Executive Chef and Executive Sous Chef on menu planning and special functions.
  • Maintain proper use, cleaning, and care of bakery and pastry equipment.
  • Control costs by managing raw materials, portion sizes, and productivity.
  • Stay updated on pastry and bakery trends to incorporate new techniques and innovations.

 

Qualifications

  • Proven experience as a Chief Baker, Chief Pastry Chef, or similar leadership role in a luxury hotel, resort, or large-scale bakery.
  • Strong expertise in both bakery (bread, rolls, doughs) and pastry (cakes, tarts, desserts, chocolates).
  • Excellent leadership, organizational, and team management skills.
  • Creative flair with a passion for presentation and innovation.
  • In-depth knowledge of food safety, hygiene, and HACCP regulations.
  • Ability to work under pressure, manage multiple tasks, and meet deadlines.
  • Flexibility to work early mornings, weekends, and holidays as required.
  • Diploma or certification in Culinary Arts, Baking, or Pastry preferred.
