Job Description

  • To check and verify whether the purchases are adequately supported by relevant documents and rates are within the acceptable limits. Check and sign the GRN’s after scrutinizing the accuracy with invoice value and quantity.
  • To check whether the orders are placed to the lowest quotation or not and report to the Accountant. 
  • Verify the discrepancies reported by the store keeper at the time of receiving the stock and make sure the details are accurate and accounted accordingly.
  • Check food and beverage issues from the store with relevant documents like bin cards; requisition, etc. are properly recorded and accounted.
  • Take adequate steps to avoid losses due to date of expiry and spoilage. 
  • Costing of recipes and review of recipes from time to time.
  • Calculates food & Beverage cost percentages monthly and daily basis.
  • Prepare recipe costing and monitor cost of menu items.
  • Review and maintain all recipes and ensure all menu items have recipes.
  • Provide recommendations on cost savings.
  • Review invoices received from restaurants, kitchen and other cost centers and update and close them in the system.
  • Maintain and updats database of costs.
  • Update and distribute purchase prices comparison and sales statistics as required.
  • Maintain stock level correctly and process corrections as required.
  • Support selection of vendors based on cost analysis.
  • Monitor inventory procedures.
  • Review inventory procedures and recommend points for improvement.
  • Participate in inventory taking for supplies and operating equipment.
  • Perform spot checks of inventory.

Qualifications

  • At least 3 years working experience in hotel or resort costing exposures.
  • Experience with budget / costs estimating, cashflow and forecast projections works.
  • Good understanding of accounting requirements.
  • Good written and oral skills with English. 
  • Strong analytical, strategic and tactical abilities.
