Job Description

Position Summary: Under the supervision of the Chef Manager, the cook-supervisor is responsible for the preparation, cooking and presentation of all foods for patient consumption. In conjunction with the Chef Manager, is responsible for the sanitation of all applicable production and storage areas. The Cook Supervisor is directly responsible for direct supervision of all kitchen staff, cash handling and opening and closing of the department. The cook supervisor is responsible for the success of Java City café by ensuring brand standards are in place at all times. Works collaboratively with chef manager and retail manager to execute location specific plan while upholding Java City’s core values. Responsible for mentoring staff in addition to delivering both superior guest service and beverages while maintaining café cleanliness standards.

Opens and closes kitchen, prepares the posted amounts of food following standardized recipes and following H.A.C.C.P guide lines and presenting and portioning them in an appealing and cost effective manner.

Follows proper H.A.C.C.P. and hospital standards. Reviews menus and prepares tallied amounts adjusting when necessary and completes sanitation assignments.  In absence of   Food Service Manager or Food Service Supervisor ensures completion of daily duties by production staff.

In absence of Chef Manager responds to issues concerning spoiled, unattractive or unpalatable food in café and or on patient line. Ensures that all food supplies meet acceptable standard when delivered.

Monitors area for safe equipment and reports any unsafe conditions to Chef Manager.

Prepares, cooks and delivers function items when needed.

Receives product from vendors following proper safety guidelines, stores items following H.A.C.C.P standards and completes inventory with Chef manager.

Ensures proper storage of frozen and refrigerated food items, including labeling dating and marking of all prepared items according to department and H.A.C.C.P. standards.

Practices, and ensures compliance with accepted H.A.C.C.P food production and food handling principles.  Ensures completion of cooking, cooling and raw food temp charts on daily basis.

Java City Duties and Responsibilities

Supervise the Cafe Environment

Ensures prompt, friendly service according to Java City Guidelines.

Suggestively sell to all guests to increase the check average.

 Handle guest complaints immediately.

Answer all guest questions about specialty coffee and espresso beverages.

Operate cash register, handles cash from guest transactions in a careful and accurate manner and follow all cash handling procedures.

Maintain cafe cleanliness.

Ensure all products meet Java City expectations.

Ensure products are merchandised and displayed to Java City standards.

Perform opening and closing procedures.

Staff café to meet projected sales.

Perform preventative maintenance.

Maintain security of the café.

Contact Retail Manager/Chef Manager and advisers regarding non-routine problems.

Ensure safety standards are in effect.

Supervise team member performance

Evaluates and acts on team member complains.

Promotes teamwork.

Sets a positive example, and is a role-model for all team members

Orients and trains

Conducts new employee orientations.

Conducts individual and group training sessions.

Certifies new team members for readiness using the Barista Workbook.

Tracks and provides feedback to team members and Café Manager on training progress.

Administrative

Conducts candidate interviews.

Executes Java City’s promotional program.

Complies with cash control and deposit procedures.

Properly inputs information into the computer system.

Submits accurate daily & weekly reports.

Other Duties & Responsibilities

Able to work at other campuses and other shifts when needed.

Supervises the proper set up, service, and clean-up of meals for patients, cafe, and catering.  Monitors, evaluates, and instructs staff in adherence to departmental policies and procedures.

Inspects kitchen and café facilities and equipment on an ongoing basis for adherence to sanitation and safety standards.

Participates in the development and implementation of policies and procedures, initiates disciplinary action when appropriate.

Orders items as needed and assures that such products meet quality standards and are properly stored and rotated.

Maintains proper appearances by complying with department dress code.

Attends required orientation and departmental meetings. Conducts in-service and orientation programs for staff as assigned.

Understands the dietary software program for inpatients and can troubleshoot issues as they arise. Can implement downtime procedures in event medical record system or dietary software system fails.

Makes knowledgeable substitutions in absence of Manager.

Performs other duties as assigned.

 

Qualifications

High School education or equivalent/Culinary school preferred but not required. ServSafe certification to be obtained within 6 months of hire and maintained every 5 years. Allergy Awareness Certification required.

Minimum of 2 year related experience preferred.

Requires the ability to read, write, and understand written and verbal instructions. Must be able to read and interpret documents such as café guidelines, safety rules, training programs, memos and operating and maintenance instructions. Must be able to speak effectively before groups of guests or team members. Ability to communicate café needs and performance expectations in written form. Ability to perform closing procedures (counting & tracking currency).

Additional Information

Exposure to infectious disease and possibly hazardous chemicals.  Frequent standing and walking, occasional sitting and lifting of 10-15 lbs.

Requires manual dexterity using fine hand manipulation to operate computer keyboard.

Requires ability to see and hear patient diet changes and visually make these changes: hear comments, requests, and questions and react: visually monitor all departmental activities: visually check patient diets and meal trays.

Supervises a staff of fifty including cooks and diet aides.

Constant contact with all food service staff.  Daily contact with nursing, and frequent contact with patients, all other departments and non hospital employees.

All decisions are subject to the Director’s final approval.

Frequent standing (up to 80% of shift), walking and carrying also occasional lifting of 30-35lbs of potential burn hazards (large pots of soup/hot water, and other cooked foods). Required to lift 40-50 pounds from floor to above head using safe lifting techniques. Exposure to possible hazardous chemicals. May require on occasion climbing a small ladder to reach stored supplies.

Requires fine hand co-ordination cooks use a variety of kitchen and cooking equipment, including steamers, large steam kettles, high-quality knives, meat slicers, and blenders and mixers to cook food, serve meals, while working on potentially hazardous slip and or trip areas, Dish Room and Freezer.  May perform a variety of routine manual tasks, such as loading and unloading and storing groceries, floor sweeping, cleaning.

Requires the ability to read recipes and to hear instructions and requests.
