Job Description

Our friendly brigade at is structured to deliver creative dishes for our three superb restaurants and events operation. The role of Sous Chef is to support and supervise the day to day running of the kitchens, inspire and motivate the whole team deliver food excellence and consistency whilst ensuring the kitchen is a positive, safe and clean working environment.

What you’ll do:

  • Bring delicious flavours to our guests’ table by ensuring food is prepared and cooked to agreed standards
  • An active role in the daily menu composition and development, keeping an eye on trends and guest demand
  • Work with the Head chef to develop menu ideas and techniques to make our kitchens an progressive and innovative environment to work in
  • Ensure statutory compliance in all food and drink areas
  • Engage with food suppliers and producers to ensure accurate knowledge and the Red Hotels sourcing philosophy is supported at all times
  • Nurture and develop the talent of the kitchen team, creating an environment that brings our the best in each team member
  • Understand and positively support the financial performance of the kitchen
  • Conduct investigations in line with hotel procedures
  • Order stock and consumables in line with the needs of the business and approved budgets.
  • Make decisions regarding staff rotas.
  • Working in Kitchens across both sites.

Qualifications

  • You live and breathe food and drink and are hungry to learn
  • You will work positively and collaboratively to achieve the highest standards
  • Previous experience working in a busy hotel or restaurant kitchen up to 2 rosette standard
  • A passion for local, seasonal produce
  • You want to be part of a team that works hard, supports each other, is professional yet fun
