The Academy of Magical Arts, Inc. is looking for a Jr. Sous Chef to join our team here at our world famous clubhouse, the Magic Castle. With over 5300 hundred members from around the world, our club promotes, fosters and educates the world of magic and illusion.

Job Description

The Jr. Sous Chef serves as “Third-in-command” of the kitchen: assist the Executive Chef, and Executive Sous Chef in supervising food quality, production and costs. The ability to quickly and authoritatively delegate tasks to kitchen personnel. Knowledge of all kitchen stations with a readily mentality to fill in for and/or assist cooks to ensure that the kitchen operates smoothly. Familiarity with administrative duties such as: ordering; inventory; training; scheduling; hiring & firing.

The Jr. Sous Chef will handle personal and private employee and company information and requires full confidentiality and discretion. This position requires background security clearance. Should you be unable to obtain the required background clearance, it will not be possible for you to work in this position.

Qualifications and Responsibilities:

Duties include but are not limited to the following.

Essential Duties and Responsibilities:

  • Manages kitchen staff on behalf of the Executive Chef and Executive Sous Chef
  • Communicates Executive Chef preparation procedures and presentation standards, observing methods of preparation, tasting and smelling prepared dishes, viewing color, texture and garnishes, verifying portion sizes and ensuring that corporate standards for food quality are consistently met
  • Assists with menu planning, inventory, and managing of supplies
  • Gives input on daily food specials to minimize food cost by maintaining effective inventory levels
  • Oversees the preparation and service of food
  • Trains kitchen staff of proper food handling, maintenance and safety
  • Manages labor hours effectively and on scale appropriate to business needs
  • When Executive Chef and Executive Sous Chefs are not present, documents and reports daily personnel issues to GM.
  • Communicates effectively with other Department Supervisors

Additional Responsibilities:
  • Assists in recruiting, training, assigning duties and supervising staff
  • Oversees operation aspects of dining room and special events
  • Maintains high standards of safety and sanitation
  • May prepare food in absence of cooking staff
  • Other duties may be assigned by management
  • Maintains effective communication skills by interacting professionally with co-workers
  • Makes recommendations for maintenance, repair and upkeep of the kitchen and its equipment

Minimum Qualifications and Skill Requirements:
  • Knowledge of applicable safety and sanitation procedures
  • Knowledge of food cost, inventory management and purchasing
  • Must have excellent communication and leadership skills,
  • Must be able to perform effectively as a team player
  • Must be able to perform and prioritize multiple tasks simultaneously in a fast paced environment
  • Bilingual speaker (English/Spanish) preferred but not required
  • Experience in personnel management and problem solving skills
  • Familiar with labor laws

Education and Certifications:

  • High school diploma required
  • A minimum of 3 years of experience in culinary arts or equivalent combination of education and culinary work experience in fine dining.
  • Specialty/Technical Training or Bachelor’s degree in Culinary Arts preferred
  • CA ServSafe Certified a must

Physical Demands:

While performing the duties of this job, the employee may be required to stand, walk, hear, talk, read, balance, use hands, use fingers, reach, stoop, kneel, crouch, crawl, taste, smell, push or pull for 8 hours.  The employee must be able to lift or move objects weighing up to 50 pounds. Ability to go up and down stairs as needed throughout shift with objects up to 50 pounds.

Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception and an ability to adjust focus.

Work Environment:

While performing this job, the employee is exposed to weather conditions prevalent at the time. This may include warm, hot or cold temperatures.  The noise level in the work environment is moderate but may be high at times.

Work Schedule:

This is a full time non-exempt position. Schedule may vary based on business demand. Availability to work weekdays and/or weekends as well as as mornings and/or evenings as needed.
