Job Description

The Executive Sous Chef is a key position, and a rare opportunity to join the culinary team of a Relais & Chateaux property - a global leader in culinary excellence and a standard-setter for the rest of the world. 

Magdalena is The Ivy Hotel’s American Contemporary restaurant, with a French brigade-style kitchen. Magdalena practices refined culinary techniques for an almost entirely locally-driven menu - including whole animal butchery/utilization, methods of seasonal preservation, and in-house baking and pastry. Together, the team creates an artistic, from-scratch expression of Maryland and the Mid-Atlantic. 

Magdalena is closed Sundays and Mondays with a last seating during the week at 9 and weekends at 10.

Qualifications

  • Your ideal work week includes breaking down whole fish, dry aging ducks, drying spices, pickling produce, going to farms to pick up seasonal bounty, clipping flowers for garnish, and leading a world-class team into a sold-out weekend and a perfectly executed dinner service

  • You are personable, energetic and focused

  • You hold yourself accountable for what needs to be done

  • You are a good team motivator and maintain an enjoyable, efficient work environment

  • You are adaptable and can handle pressure, unusual ingredients and new styles of cooking

  • You demonstrate high-paced functionality and consistent quality

  • You can be an on-par stand in for Executive Chef when required

  • You always want to get better at what you do

Experience: 

  • Experience in a brigade-style kitchen 

  • Proficient knife skills on par with a knife as an extension of one's arm

  • Previous experience in maintaining logs, ordering, delegation, safe practices, HAACP, punctuality, mise en place, managing multiple employees, and problem-solving

  • If missing any of the above, a strong desire and dedication to learn
