Job Description

Reporting directly to the General Manager with line manager responsibility for the Restaurant Manager and Sommelier, our Food and Beverage Manager will be responsible for:

· Managing every aspect of the restaurant and front of house food and beverage operation, supporting service on a daily basis

· People management, team development, carrying out regular training and appraisals to continually deliver an exceptional guest experience

· Assisting in the preparation of the weekly rota and day to day HR responsibilities in liaison with the General Manager

· Ensuring that the five red star standards that Pale Hall is renowned for are achieved every single day without compromise, striving towards Four Rosettes and a Michelin Star

· To have a sound and in depth knowledge of fine dining service standards, fine wines and champagnes, cocktail and drinks preparation and techniques

· To liaise closely with the Head Chef regarding menu development and SOPs

· To be fully conversant with food and beverage back of house procedures including stock control, ordering and budget management, closely monitoring departmental expenditure

· To assume responsibility for restaurant management in the absence of the restaurant manager and/or sommelier

· Adopting a hands-on team spirit approach to identifying and stepping in where an extra pair of hands is needed

· Building strong relationships with other heads of department to ensure a smooth interface and effective communication between departments

· Producing regular reports for the General Manager as directed

· Assisting in the recruitment, onboarding and training of new members of the team

· Ensuring that statutory and health and safety requirements within the area of responsibility are met at all times

Qualifications

· At least two years hands-on management experience in a similar role, preferably within a luxury country house property

· A strong and charismatic personality to inspire and motivate the team, leading by example

· A strong focus on standards and attention to detail, with a keen eye for identifying where improvements are needed and a proactive approach to problem solving

· Immaculate personal presentation

· Excellent customer service skills, and the confidence to engage with guests at all levels

· A genuine passion for our industry with the desire to keep driving forward with plenty of ideas and enthusiasm

· A flexible approach, plenty of team spirit and a great sense of humour!

· A salary of £35k to £40k depending on experience

This is a full time role, five days over seven Monday to Sunday with duty management responsibilities in line with the weekly rota.
