Palé Hall is a luxurious destination for quiet retreat, comfort and culinary indulgence. Situated in the tranquil Dee valley this grand, historic Victorian mansion has an idyllic woodland garden rolling down to the banks of the river. The spectacular Snowdonia National Park is on our doorstep.  The hotel features eighteen luxurious, individually styled bedrooms and suites with sumptuous décor, each with a beautifully appointed bathroom. In addition there are four charming garden suites situated within the estate grounds.  Our guests enjoy two contrasting dining experiences, the Henry Robertson fine dining room with its Michelin Green Star and the rustic Huntsman bistro.  

Job Description

A great opportunity for a talented and ambitious Chef de Partie, looking to further their career in an AA Five Red Star kitchen with AA Three Rosettes and a Michelin Green Star.

Pale Hall offers two dining experiences to our guests, the Henry Robertson fine dining room serving our signature five and eight course tasting menus, and the rustic Huntsman bistro with a relaxed a la carte. Our food is created from locally sourced and sustainable produce, with menus changing regularly as we move through the seasons.

The role is to manage an efficient and profitable section within the kitchen, and ensure that attractive seasonal food of the highest quality is served efficiently and consistently whilst achieving agreed revenue targets and customer satisfaction through effective management.  To cook dishes and carry out tasks as directed by senior chefs, whilst working in a hygienic manner and in line with statutory and company guidelines.  We'll also expect a lively interest in the menu planning process, and development of new dishes. 

We’re interested in hearing from enthusiastic chefs keen to develop and expand their skills, especially those with a passion for fine dining.  We’re offering a 48 hour contract with a salary of £28,500. Live-in accommodation may be available.

Qualifications

At least two years chef experience in a fine dining establishment.  Food Safety Level 2 at a minimum.
