The eighteen-bedroom Relais & Châteaux property, perched perfectly on the rocks in the heart of St Mawes. All the bedrooms are individually designed, the ultimate in waterside comfort and luxury, each with its own unique style and charm.

The hotel restaurant, led by Executive Head Chef Dorian Janmaat, focuses on locally sourced produce with flavour, texture and presentation being integral to all dishes. Dorian and his team have designed a menu around stories brought to fruition through carefully developed relationships with local suppliers, fishermen and farmers. This is an exciting opportunity to come and join the team at the Award Winning The Idle Rocks Hotel and Restaurant, in St Mawes, Cornwall.

Would you love to work with Chef Dorian Janmaat (Previous Head Chef at Le Manoir Aux Quat Saisons with Two Michelin Starts) to achieve our aspirations? Our ideal candidate will be driven and ambitious.

As The Idle Rocks Head Pastry Chef you will be responsible for ensuring all of the desserts are created and plated perfectly with attention to detail, as well as assisting the kitchen team in ensuring a smooth and efficient service.

Responsibilities

  • Creating amazing Bread, Pastry, Deserts, Chocolate’s, Petite Fours, Ice Cream, Sorbets and other products as your imagination creates.
  • Managing a Commis Chef and delegating work.
  • Ordering and stock taking of all produce on section.
  • Ensuring that the restaurant is always fully stocked with fresh produce to excite and encourage customer spend.
  • Constantly seeking new ingredients and techniques to improve customer dining experience.
  • Make menu suggestions and understand costing implications.
  • Actively participate in Kitchen Team meetings.

About you

  • You have to be a flair and passion for pastry, and aspire to achieve the highest of standards.
  • You have to be flexible, articulate and have a desire to progress to the next level.
  • You have to be a chef who is keen to expand their knowledge and skill set.
  • You will be hard working, reliable, trustworthy and competent enough to work alone and have the experience and people skills to work within a small team.
  • Be calm and focused in a high pressure, busy environment.
  • You must have a good understanding of and the ability to manage food stock to help hit and maintain relevant targets.
  • Willingness to learn and a great commitment towards work.

Qualifications

Hospitality related qualifications are desirable, however not compulsory should your experiences prevail.

You must have worked in a similar restaurant or hotel environment previously, and have at least 3-4 years experience within a kitchen environment as a demi pastry/chef de partie.

Contract:

  • Job Types: Full-time, Permanent.
  • Salary: From £12.00 - £12.50 per hour (depending on the experience).
  • Holidays: 28 days per year.
  • Schedule: Day shift, Monday to Friday and weekend availability.
