Job Description

JOB PURPOSE:

To assist in the managing of the complete F&B operation including Bars, Restaurants, Room Service, Groups and Conventions, Banqueting and Salon Prive, to ensure guest satisfaction, maximise profitability and maintain / reduce costs.

MAIN RESPONSIBILITIES:

Assist in the managing of the F&B Operation which includes Restaurants, Bars, Banqueting, Room Service and Salon Prive.

Closely work with Groups & Conventions, National Sales, F&B Control, Kitchen and Finance, in ensuring that all persons are effectively communicated to at all times.

Monitor that the required level of discipline and deportment is being maintained at all times by all employees.

Ensure development of team members to improve their skillset for an improvement in guest experience.

Responsible for Financial budgets, including all costs and revenues within the allocated portfolio.

Attend to all Guest queries and complaints timeously and professionally.

Ensure that standards and services are in line or above those required by the complex’s grading and are maintained at all times.

Closely work with the Promotions department to ensure the smooth running of all F&B Promotions.

Monitor that IR and HR policies and procedures are applied consistently throughout the F&B department.

Ensure maximised profitability through Revenue and Service Improvement Strategies and Cost Management.

Qualifications

MINIMUM REQUIREMENTS:

Matric/Grade 12

6 years Management experience in Food & Beverage of which at least 3 years must be in a Senior Management capacity, overseeing a 5 Star multiple outlet complex.

Hotel School Diploma or University Degree directly related to F&B required.

Computer literate in Microsoft Word, Excel and PowerPoint, Micros POS and Fidelio Materials Control.  Opera Sales & Catering knowledge will be an added advantage.

Good understanding of all finance disciplines including menu costing, income statement analysis, sales analysis, etc. 

Excellent communication skills required.

Shift work is an operational requirement.
