Job Description
Take full charge of the daily running of the Restaurant Kitchen Operations and Kitchen staff
Responsible for all aspects of the Kitchen unit in the allocated Outlet ensuring that Company policies and standards are followed.
Full understanding on menu planning and costing
Plan, direct, and supervise the food preparation and cooking activities of multiple kitchens.
Ensure that that the highest level of standards in the preparation and serving of food items is maintained.
Ensure food stock taking is done at the required times.
Strong guest relations and customer service will be essential.
Monitor that food cost budgets are in line and are achieved.
Ensure all budgeted costs are controlled on a monthly basis.
A good understanding of all financial matters relating to all outlets under control.
Ensure the hygiene standards are met in line with Food Safety Act requirements.
Manage the flexi work force according to operational requirements in order to optimize staff cost..
Ensure training requirements for the Kitchen are ongoing with regular follow ups
Qualifications
Matric / Grade 12 or equivalent
Hotel School Diploma or equivalent qualification will be advantageous
Minimum of 5 years’ experience as a Senior Chef in a similar environment
Excellent Interpersonal and Communication skills
Strong organizational skills
Computer literacy essential
Knowledge of modern food trends
Shift work is an operational requirement
