Job Description

  • To act as liaison between Maitre d’Hotel and Dining Room Staff in order to identify the strengths and potentials of each person and to assign them to the location best suited to their talents;
  • To assist the Maitre d'Hotel in managing the daily operation of the Dining Room;
  • To create a safe working environment and to ensure that all Dining Room Staff comply with the latest Health and Sanitation regulations (USPH and all other Port Health Authorities) at all times;
  • To ensure the best possible dining experience for the Guests and to provide special attention to Guests with special needs and dietary requirements;
  • To train, coach, council, support and delegate all Dining Room Staff;
  • To guide the Dining Room staff to ensure that everyone is updated with relevant shipboard information at all times;
  • To establish work schedules, section plans and rotations for Dining Room staff and to schedule any additional duties (gangway duties, storing, luggage handling etc.) as required;
  • To ensure that any Maintenance issues in the Dining Room are reported in a timely manner and that the work orders are followed up on accordingly;
  • Ensure that Dining Room staff follow uniform guidelines and personal hygiene procedures according to Company policy standards;
  • To adhere to, and to ensure that the Dining Room staff adheres to all Company Policies and Procedures, Manuals and Directives;
  • Other responsibilities, as assigned, but not limited to the above.

Qualifications

  • High school diploma from hospitality school or successful completion of an Apprenticeship in the Food Service industry required;
  • Minimum of two (2) years’ experience in a hotel or two (2) years’ experience onboard a cruise ship in a similar position;
  • Must be fluent in written and spoken English;
  • Advanced German skills required, any additional foreign language is a plus;
  • Excellent interpersonal and public communication skills;
  • Must have very good administrative skills (proficient in Office package is a must and Knowledge of MXP programs is an advantage);
  • Very good organizational skills are necessary along with the ability to multitask;
  • Must possess excellent leadership and human resource management skills and the ability to interact with all levels of people;
  • Must be able to communicate and implement corrective action steps in an effective, yet diplomatic fashion;
  • Must be able to perform well under pressure;
  • Needs to have an outgoing personality and has to possess a positive attitude, maintaining a friendly and approachable demeanour at all times.

Additional Information

Financial Responsibilities

  • To ensure that crockery and glassware breakages are kept to a minimum;
  • To assist the Maitre d'Hotel in monitoring and controlling the overtime for the Dining Room Staff;
  • To monitor and to assist the Maitre d'Hotel in controlling inventories and all Dining Room expenditures to ensure that it stays within the limits of the Consumable and Budget;
  • To ensure that Company property is maintained properly and treated with respect at all times.

Safety Responsibilities

  • To ensure that the proper use of Personal Protective Equipment in the Dining Room work areas is implemented at all times;
  • To ensure that Safe Lifting Techniques are practiced at all times in the Dining Room;
  • To be familiar with Ship´s Emergency plans;
  • To be familiar with Safe Working Practices.

Team Communication and Meetings

  • To schedule and conduct daily meetings with the Dining Room staff;
  • To attend meetings with the Maitre d’Hotel;
  • To encourage and demonstrate good communication, excellent teamwork and continuous training, coaching and counseling.
