Job Description

The Bar Manager is responsible for leading and managing all bar operations across the resort, ensuring exceptional guest experiences, maintaining luxury brand standards, and achieving financial targets. This role oversees beverage quality, staff performance, stock control, and guest engagement while supporting the resort’s overall Food & Beverage strategy.

Bar Operations

  • Manage day-to-day operations of all resort bars.
  • Ensure service is smooth, efficient, and aligned with luxury resort standards
  • Maintain high levels of cleanliness, hygiene, and safety at all bar areas
  • Ensure all equipment, glassware, and bar facilities are well maintained

Guest Experience

  • Personally interact with guests to create memorable experiences
  • Handle guest complaints and feedback professionally and promptly
  • Ensure consistency in drink quality, presentation, and service style
  • Promote premium beverages, signature cocktails, and upselling

Team Leadership & Training

  • Recruit, train, schedule, and manage bartenders and bar staff
  • Conduct regular training on mixology, service standards, and product knowledge
  • Ensure staff grooming, discipline, and professional conduct
  • Motivate and develop the team to deliver high performance

Beverage & Menu Management

  • Develop and update cocktail, mocktail, wine, and spirits menus
  • Introduce innovative and tropical beverage concepts suitable for Maldives resort guests
  • Ensure recipe standardization and portion control
  • Monitor global beverage trends and guest preferences

Inventory & Cost Control

  • Manage ordering, receiving, storage, and issuing of all beverage items
  • Conduct regular stock takes and control variance
  • Monitor wastage, spillage, and breakage
  • Maintain beverage cost within budget

Financial & Sales Performance

  • Drive revenue through creative promotions and upselling
  • Analyze bar sales, cost, and profit reports
  • Support budgeting, forecasting, and financial planning

Health, Safety & Compliance

  • Ensure compliance with Maldives Health & Safety regulations and resort SOPs
  • Enforce responsible alcohol service and guest safety
  • Maintain hygiene and sanitation standards

Events & Island Activities

  • Support weddings, beach parties, sunset cocktails, and private events
  • Coordinate with Events, Kitchen, and Front Office teams
  • Manage temporary or pop-up bars for special functions

Administration & Reporting

  • Prepare daily, weekly, and monthly bar reports
  • Manage staff rosters, attendance, and leave
  • Track guest feedback and service quality

Qualifications

  • Diploma or Degree in Hospitality Management or related field
  • Minimum 3–5 years of experience as Bar Manager or Bar Supervisor in a hotel or resort
  • Strong knowledge of spirits, wines, cocktails, and beverage trends
  • Excellent leadership and communication skills
  • Strong financial and inventory management skills
  • Ability to work in a fast-paced luxury environment
