Job Description

  • Manage Dim Sum & Wok Kitchens: Ensure the kitchen operates efficiently according to established standards. 
  • Food Production: Organize production in a cost-effective and hygienic manner, maintaining food standards. 
  • Menu Development: Assist in menu formulation, including consideration of ingredient quality, availability, and seasonality. 
  • Market Lists: Prepare daily and weekly market lists. 
  • Staff Training & Discipline: Train and discipline kitchen colleagues, working with the Executive Chef. 
  • Efficiency & Cost Reduction: Identify opportunities to improve efficiency and reduce costs without compromising service. 
  • New Product Development: Propose and implement new products for guests. 
  • Cleanliness: Ensure a high level of cleanliness across all culinary departments. 
  • Food Quality: Monitor and maintain the quality of food items, notifying management if standards are not met. 
  • Hiring, Training, and Scheduling: Assist management with hiring, training, and scheduling of kitchen staff. 
  • Safety and Security: Follow all company and safety policies, including reporting maintenance needs, accidents, and unsafe conditions. 
  • Uniform and Personal Appearance: Maintain a clean and professional appearance. 
  • Guest Service: Address guest service needs and speak with others in a clear and professional manner. 

Qualifications
