Job Description

As Executive Sous Chef you are responsible over the great variety of the different kitchens of our Food & Beverage division, such as:

  • The Grand Café Krasnapolsky; all day concept restaurant with an a la carte menu, Afternoon teas and the Champagne room
  • Cake room with creations from our Pastry team, homemade room amenities and chocolate art pastry
  • Restaurant The White Room*; our Michelin star restaurant in collaboration with Jacob Jan Boerma***
  • Bar The Tailor; our award-winning cocktail bar with the concept of making all the syrups and garnishes for the cocktails/drinks themselves, as well as a paired food offering
  • Monumental Winter Garden dating back to 1880, where many exclusive events take place and is daily breakfast venue for our guests
  • In Room Dining; always a great challenge with over 402 rooms in the hotel with opening hours throughout the whole day
  • The Banqueting with events as congresses, gala diners, cocktail receptions and lunches

As an Executive Sous Chef you coordinate and arrange the execution of the work in the various departments of the kitchen. In this role you support the Executive Chef in various activities such as making the roster, complying with and checking hygiene procedures and managing the kitchen stock. In addition, you contribute to changes of the menu, the development of recipes/calculations, to the guest experiences, to the efficiency in the kitchen and to the job satisfaction of your colleagues. Besides company and Anantara brand standard guidelines, also there is plenty of room to bring your own experience into work.  

You have a coaching and supporting role for the chefs and you monitor compliance with regulations in the field of safety, working conditions and HACCP guidelines and working and presentation methods. You keep a helicopter view and help with the daily operation. In this role you are often present on the floor. You will maintain close contact with the Executive Chef and other members of the hotel's management team.

Qualifications

  • You have at least 3 years of experience as a manager and are ready for the next step.
  • Creativity, a hands-on mentality and eagerness to exceed expectations
  • Great passion for cooking and for delivering a special guest experience
  • Experience in working according to kitchen hygiene activities and health and safety standards
  • Knowledge of the latest food trends and the ability to apply the developments in your work
  • Excellent communication skills and proficiency in the English language, Dutch is a plus.
