Job Description

The Director of Food and Beverage will oversee all the aspects relating to the management of the Food and Beverage operations at Oaks Cypress Lakes Resort; including financial forecasting, rostering, and implementing promotions to increase food and beverage sales.

You will:

  • Work closely with the sales and marketing team to ensure maximum yield from potential revenue
  • Ensure conference/functions packages are fully costed and quoted against predicted revenue to ensure a profit
  • Create exceptional dining experiences for our guests
  • Liaise with the chefs and head office F&B team on the restaurant menu 
  • Ensure growth of staff members’ learning and development in key hotel operations and create a learning culture within the Hotel
  • Actively recruit and select high potential team members
  • Understand, comply and promote health and safety policies and procedures
  • Complete all daily, weekly and monthly reporting requirements
  • Ensure all labour and food costs are managed in relation to predicted revenue

Qualifications

  • Previous operational experience managing a Food & Beverage team
  • Previous hotel or resort experience would be highly regarded
  • Experience in recruiting, rostering, wage costs and budgeting
  • Strong communication skills and ability to build relationships
  • Current RSA certification and food handling certificate
  • High attention to detail
  • Strong work ethic and punctuality
