The Dietary Director must have the skills to direct, supervise, and manage the dietary services with hands on activities in the kitchen operations.

Essential Duties and Responsibilities

•Manage the day to day production to ensure that all production staff performs with a full understanding and demonstration of proper sanitation, food borne illness, and cross-contamination policies and procedures and maintain high standards for restaurant and health care dining services

•Menu Development

•Responsible for maintaining the dietary budget

•Prepare and maintain records, reports, inspections, and paper work regarding Dietary operations

•Monitor all Dietary Staff operations

•Maintain quality level of service

•Performance of daily sanitation


Qualifications

Performance Requirements

• Proven culinary skills

• Supervisory experience

• Scratch cooking experience

• Experience with high volume food production
