Sous Chef
Job Description
Our client is looking for a Sous Chef for their 4-star, rosette rated hotel in Hertfordshire. The property is high profile and prestigious, serving the best quality cuisine to a rosette standard with an emphasis on fresh, seasonal and local produce. The hotel has 50 bedrooms, wedding and conference suites and a rosette restaurant.
Purpose of the role
·Support the Head Chef in the smooth running of the kitchen operation
·Oversee the service in the rosette Restaurant
·Banqueting for up to 200 covers.
·Assist in menu design and planning,
·Managing stock control and adhering to food cost guidelines.
·Ensure compliance with both Food Safety and Health and Safety in the kitchen
Desired Experience and Knowledge
The ideal candidate will have credibility as a Chef and be working within a rosette environment. It is essential that the Sous Chef has a clear passion for food, the desire to grow and progress within a busy kitchen environment and the ability to learn and improve the brigade.
