Job Description
POSITION DUTIES: Responsible for the introduction and implementation of Air-Dried Meat product-related knowledge and expertise into the larger organization. Work with Plant Leadership Team to develop growth strategies for the Air-Dried Meat segment of the organization. Provide leadership and direct supervision of the air-dried meat manufacturing process. Supervise & provide training on equipment such as, but not limited to: biltong cutter, vacuum sausage stuffer, mixer/grinder, vacuum tumbler, biltong slicer, MAP injection packaging machine, chamber vacuum machine. Design and implement yield control on primary versus tertiary products. Recipe creation and scaling as related to new product development. Conduct testing/recording for HACCP critical control points. Implement and support USDA food safety regulations at a plant level. Work along with the Plant Leadership Team to monitor plant targets and Key Performance Indicators on a regular basis. Support the plant operations in building and implementing growth strategies as defined by the Plant Leadership Team. Be a resource to the Leadership Team by identifying areas for growth in product development and production operations as well as creating implementation strategies for new initiatives. Support the Sales Team using product and market expertise to identify opportunities for new market share and assisting with the development of continued sales strategies to drive new growth in the Air-Dried Meat industry. Supervise production worker subordinates.
Qualifications
POSITION REQUIREMENTS: The qualified candidate must have at least a High school diploma/GED or foreign equivalent degree. The qualified candidate must have at least 4 years (48 months) of experience with all the following: (a) Working with the following types of dried-meat: biltong, droewors, cabanossi, and air-dried beef strips; (b) Working with Air-Dried meats on a commercial scale; (c) Recipe creation, recipe scaling, and product development including for Air-Dried meats; (d) Conducting quality control on products; and (e) Utilizing and training individuals on all the following tools: biltong cutter, vacuum sausage stuffer, mixer/grinder, vacuum tumbler, biltong slicer, mincer, vacuum sealer, band saw, and chillers. All experience may be gained concurrently.
