Job Description

Reporting to the Chef, the primary responsibilities of the Lead Line Cook/Sous Chef is responsible for the safe preparation, execution of catering menus, and overseeing safe food handling practices in the catering cooks and line cooks. The Lead Line Cook/Sous Chef should possess HAACP knowledge and be able to coordinate and time menu execution within food safety guidelines. The Lead Line Cook/Sous Chef will direct and support line-cooks and catering cooks as needed.

The Lead Line Cook/Sous Chef will also ensure that daily temperature and chemical checks are done and recorded and will inform the chef of any deficiencies in temperature or chemical supply immediately.

The Lead Line Cook/Sous Chef will also see that kitchen staff keep the cooler and storage areas well maintained and tidy and that proper storage procedures are followed when orders are received.

All staff are also responsible for participating in light clean-up of the bistro (clearing buffet and tables) and atrium

The Bistro is open seven days a week and Lead Line Cook/Sous Chef must be flexible and willing to work evenings & weekends.

Position Responsibilities
What is expected of you?:

· Consistently monitors kitchen operations and ensures kitchen and food prep areas are tidy, organized and clean
· Inspire and motivate kitchen team to be creative, passionate and productive
· Safely prepare and mise-en-place and cold appetizers including but not limited to: deli platters, vegetable platters, raw meats, salads, and vegetables
· Ensures food, supplies, and chemicals are stocked and notifies the chef when they need to be ordered
· Sanitize and clean equipment with appropriate cleaning products throughout the shift and as directed
· Support the catering and line cooks with prep and buffet setup as needed
· Follow the nightly closing checklist at the end of the day
· Follows HAACP directions and maintains proper cooler organization (raw meats and seafoods below ready to eat products, no food containers stored on the floor)
· Other duties may be assigned as required.

Qualifications

· A minimum of 2 years of line leadership experience
· The ability to lead the team by providing clear instruction and by setting an example of hard-work and attention to detail
· Foodsafe Level 1 certification is mandatory
· Good presentation and personal hygiene
· Must be available evenings and weekends as needed.
· Able to work in a standing position for long periods of times.
· Able to lift 20-30 lbs
· Sense of personal responsibility for delivering catering menus as outlined and on time
