Job Description

The Kitchen Utility helps ensure guest satisfaction and the success of the Kitchen department by performing dish washing, food preparation and cleaning duties.  The incumbent is responsible maintaining the clean and sanitary condition of the kitchen, ensures kitchen items are clean and ready for use in a timely manner, and for maintaining proper levels of prepared foods.  Also assists with related duties such as receiving and busing.

ESSENTIAL DUTIES/RESPONSIBILITIES/FUNCTIONS:

  • Loads, operates, and unloads the dish washing machine; Adds proper amount of dish-washing liquid/chemicals as needed.
  • Follows all procedures necessary to keep the dishwashing machine operating at health department standards; Notifies Management when the necessary supplies are running low and need to be ordered.
  • Properly stores and organizes clean pots, pans, dishes, glasses, utensils, etc. in proper areas.
  • Checks, sweeps and mops floors in assigned areas throughout shift to keep clean and free of debris.
  • Checks and cleans drains and drain screens throughout shift as needed to keep free of debris.
  • Checks and restocks hand-washing stations with necessary supplies.
  • Cleans, sanitizes and polishes food areas and stainless-steel surfaces as needed.
  • Scrubs and clean ovens, as needed.
  • Performs deep cleaning of kitchen and equipment as required.
  • Assist in the preparation of different types of food from the menu, adhering to recipe standards.
  • Measures ingredients and prepares them in accordance to recipe specifications.
  • Washes, peels, and cuts ingredients preparing them to be used in different meals.
  • Follows all kitchen portion control measures.
  • Stores food properly and safely.
  • Assists with receiving incoming food deliveries and helps store food items in proper places as necessary.
  • Assists with busing duties including removing dishes from tables, cleaning/wiping down tables, chairs, condiment containers, etc.
  • Uses personal protective equipment (PPE) as required.
  • Know and follow all company, Environmental, Health and Safety Management Program policies and procedures.
  • Works extra shifts and hours as required.
  • Assists in other departments as needed.
  • All other duties as assigned.

Qualifications

  • Read, write and speak basic English.
  • Able and willing to work long hours, including early morning hours, night shifts and “call-outs”.
  • Must be able to work in cold (walk-in freezers), hot (dish-washers, ovens, cooking equipment), humid and wet (dishwasher) areas.
  • Act in a professional manner in stressful situations.
  • Knowledge of proper use of cleaning chemicals, supplies and proper cleaning techniques.
  • Must understand and follow proper food preparation standards and techniques.
  • Knowledge of or ability to learn all local and state sanitation requirements.
  • Proper food handling or equivalent certification or ability to obtain upon hire.

PHYSICAL REQUIREMENTS TO PERFORM JOB DUTIES:

  • Must be able to understand normal conversation and accurately communicate information.
  • Ability to stand and walk on paved, unpaved, uneven and sometimes slippery surfaces for extended periods of time.
  • Ability to kneel, stoop, crouch, squat, twist, turn, push, and pull repetitively; Reach down, forward and overhead frequently.
  • Must be able to work in cold (walk-in freezers), hot (dish-washers, ovens, cooking equipment), humid and wet (dishwasher) areas.
  • Able to use cleaning supplies including harsh chemicals and cleaners such as oven cleaner and general cleaning solutions.
  • Ability to lift and carry up to 50 pounds frequently.

EDUCATION AND/OR EXPERIENCE REQUIRED TO PERFORM JOB DUTIES:

  • High School Diploma, GED, or equivalent, or previous Kitchen, Hospitality, or related work experience, or equivalent combination of work experience and education preferred.
