• Provide strategic direction, governance and operational oversight of food safety compliance across a national portfolio 300+ pub kitchens
• Based in Melbourne, Brisbane or Sydney

As the Senior Manager Food Safety, you will provide strategic direction, governance, and operational oversight of food safety compliance across our national portfolio of 350 Hotel kitchens. 

Operating within a high-volume, multi-site hospitality environment, this role ensures adherence to Australian food standards through developing tailored programs and training specifically designed for Pub kitchens.

You’ll translate complex regulatory frameworks into practical, kitchen-floor realities, fostering a robust food safety culture across diverse culinary teams.

Here is a taster of what you can expect in this role:

Strategic Governance & Food Safety Culture

• National Strategy: Design, deploy, and evolve a unified Food Safety Management System (FSMS) tailored for a multi-site, national hotel group
• Culture & Training: Drive a proactive, behaviour-based food safety culture across 350 kitchens. Partner with Learning & Development to deliver scalable, practical and effective food handler training programs

Australian Regulatory Compliance

• Food Standards Code: Ensure compliance with the FSANZ (Food Standards Australia New Zealand) Food Standards Code
• State & Territory Alignment: Standardise compliance across varying state regulations to ensure a consistent national standard is created for the group

Food Safety Quality & Incidents 

• Supplier Assurance & Auditing: Support our Procurement team with the tools and guidance to ensure our vendors have the relevant food safety accreditation; govern a tiered audit program for high-risk foods, scaling frequency and depth based on vendor risk, accreditations, and NCR data
• Quality Framework: Implement a data-driven quality framework and verification schedule across all 350 properties, leveraging digital compliance platforms for real-time risk visibility

Technology 

• Develop a strategy to ensure allergen notifications are updated through a system control within ALH menus and customer facing materials  
• Oversee solution design and implementation of any Food Safety technology utilised across the group and develop strategies to ensure allergen notifications are updated through a system control

Now let’s talk about you: 

• Tertiary qualification in Food Science or related field of study
• Minimum 5–7 years of food safety management experience, ideally operating across a high-volume, multi-site hospitality or QSR environment
• Formal HACCP credentials
• Demonstrated experience in building, embedding and maintaining a Food Safety Management Program
• Sound understanding of Food Safety in particular relating to the management of hazards
• Deep, practical understanding of FSANZ Food Standards Codes, state-based Food Acts, GMP, and the application of behaviour-based food safety culture models
• Proven track record in continuous improvement
