Are you a high-caliber food and beverage leader ready to pilot one of the most exciting, high-volume dining and event operations in Brisbane? The Brook Hotel is seeking a sophisticated, highly organised Restaurant Manager to take full operational ownership of our bustling bistro, diverse bar spaces, and thriving hospitality departments.
This is a premium, multi-faceted leadership role. "The Brook" isn't just a neighbourhood pub, it is a modern precinct. On any given day, you will be orchestrating high-turnover bistro floor service, managing corporate conferencing setups, and collaborating with our accommodation wing to deliver an exceptional guest journey. We need a hospitality heavyweight who obsesses over elite service standards, loves building a positive team culture, and possesses the administrative muscle to back it all up.
A day in the life of a Restaurant Manager:
- Lead from the front during peak, high-volume seatings to ensure immaculate presentation, tight service execution, and seamless kitchen-to-floor flow.
- Build highly efficient, compliant staff rosters that hit complex labour targets and maximise profitability without sacrificing the guest experience.
- Collaborate with our events team to flawlessly execute premium corporate functions, local celebrations, and community conferences.
- Maintain a seamless synergy with the hotel wing by overseeing room service standards and ensuring a cohesive five-star experience for overnight guests.
- Mentor, train, and inspire a large front-of-house crew to deliver warm, attentive, and professional hospitality during intense trading periods.
About you:
- You have a proven track record as a Restaurant Manager, F&B Director, or high-level Food & Beverage Manager within a high-volume hotel, premium large-scale restaurant, or busy resort precinct.
- You are a master of high-turnover dining environments and possess the stamina and focus required to maintain elite standards under high volume.
- You possess sharp operational administrative skills with confident experience in workforce rostering, P&L management, and hitting aggressive operational targets.
- You have a background or a strong understanding of function coordination, corporate conferencing, or banquet-style service.
- You have highly regarded exposure to accommodation-adjacent hospitality like room service or hotel guest relations.
- You’ve got a current RSA and RSG/RCG as per state requirements
Inherent requirements:
This is a hands-on role that involves manual handling and lifting as part of regular duties (e.g. moving stock, kegs, and deliveries). Applicants must have the ability to perform physical tasks safely and efficiently.
