Job Description

The Bakery Manager oversees the production of bread products for an Eataly, including but not limited to: breads, pizza alla pala, rolls, focaccia and seasonal items. The Bakery Manager leads and develops a team of Bakers, Pizza Makers, and the Assistant Baker Manager in a 24-hour-operating bakery.

Reports directly to the Head Chef and reports functionally to the Head of Bakery Operations.

  • Organizes the store’s Bakery operations to maximize profitability while upholding the company’s mission, values, policies, quality, and guest experience standards
  • Builds and leads a high-performing team: sources and hires, effectively trains, motivates, evaluates, develops, and retains talent
  • Responsible for administrative tasks such as writing employee schedules, approving vacation and unpaid time, and submitting payroll
  • Reviews financial information such as sales/costs and monitors budget to ensure efficient operation and spending within the specified budget; works with the Head Chef to correct any deviations from the budget
  • Prepares bread products for restaurant and retail operations in accordance with Eataly’s authentic Italian recipes and quality standards
  • Maintains and nurtures natural yeast, local and organic flour, and naturally leavened products
  • Collaborates closely with store leadership to ensure all necessary parties are aware of daily bakery activities, including absences, schedule coverage and product availability
  • Communicates with the Head Chef and Head of Bakery Operations on new recipes for the bakery
  • Orders and monitors inventory of all ingredients and products for the bakery, including tracking and documenting daily transfers and waste in the appropriate system
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Addressing guest and employee incidents; documents, investigates, elevates incidents in collaboration with store leadership and HR, including employee terminations
  • Performs other duties as required or assigned

Qualifications

  • 5+ years of experience in bread and related production
  • 2+ years of experience managing a sales and production team; preferably in a grocery bakery department
  • Excellent communication skills
  • Outstanding time management stills
  • Proficiency in Microsoft Office
  • Degree from a post-secondary culinary arts training program highly preferred

Job Requirements

  • Availability to work onsite with a flexible schedule often including evenings, weekends and holidays
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to work with a wood burning oven, electric pizza convection oven and commercial spiral mixer

Compensation

  • The annual salary for this role is $75,000.00
