Job Description

The role requires a highly skilled and creative Chef. As a Branch Chef, you will oversee all aspects of the kitchen operations in our high-end restaurant branch. Your expertise in culinary arts, creativity, and leadership skills will be instrumental in maintaining our reputation for culinary excellence. You will collaborate with the executive chef to develop and execute innovative menus, train and inspire the kitchen staff, and maintain the highest food quality and presentation standards.

This position reports to the Executive Chef and will be responsible for one of the restaurants in Kenya.

Role Profile:

The role is an integral role with key responsibilities across the following areas:

  • Lead and manage the kitchen team to ensure smooth daily operations and efficient workflow.
  • Collaborate with the executive chef in menu planning, recipe development, and menu engineering to ensure a unique and memorable dining experience.
  • Supervise and participate in food preparation, cooking, and plating to maintain consistent quality and presentation of dishes.
  • Train, mentor, and inspire kitchen staff, ensuring they adhere to culinary standards, techniques, and safety protocols.
  • Conduct regular food tastings and provide feedback to the team to continuously improve taste, presentation, and creativity.
  • Maintain proper inventory levels and ensure the availability of high-quality ingredients while minimizing waste and controlling costs.
  • Implement and enforce health, safety, and sanitation standards in the kitchen, adhering to local regulations and best practices.
  • Foster a positive and collaborative work environment, promoting teamwork, open communication, and professional growth among the kitchen staff.
  • Stay updated on industry trends, techniques, and new culinary concepts, and incorporate them into menu development and kitchen operations.
  • Collaborate with suppliers to source premium ingredients and build strong relationships to ensure the highest quality of food products.
  • Assist in the recruitment, training, and evaluation of kitchen staff, ensuring a skilled and motivated team.
  • Monitor and analyze kitchen performance metrics, such as food costs, labor costs, and kitchen efficiency, and implement corrective measures as needed.
  • Work closely with other departments, such as front-of-house staff and management, to ensure seamless operations and exceptional guest experiences.

Qualifications

Candidate Profile

The ideal candidate will have the following professional and personal skills, competencies, and characteristics:

  • Proven experience as a Chef or Sous Chef in a high-end restaurant or fine dining establishment.
  • Culinary degree or relevant certification from a reputable culinary institution.
  • Strong culinary skills and a passion for creating exceptional, innovative, and visually appealing dishes.

 

Knowledge:

  • Extensive knowledge of culinary techniques, flavor profiles, and plating presentation.
  • Excellent leadership and team management abilities.
  • Strong organizational and time management skills to handle multiple priorities and meet deadlines.
  • Attention to detail and commitment to maintaining high standards of food quality and hygiene.
  • Proficiency in menu planning, recipe development, and cost control.
  • Ability to adapt to changing circumstances and thrive in a fast-paced, high-pressure environment.
  • Excellent communication and interpersonal skills.
  • Knowledge of health, safety, and sanitation regulations.
  • Availability to work flexible hours, including evenings, weekends, and holidays.
