Job Description
Job Summary:
The Dining Room Technician is responsible for the day-to-day supervision of dining room operations in a remote camp environment. Reporting directly to the Chef, this role oversees the dining room team and the designated Kitchen Helpers assigned to dining room and cleaning support tasks. The position ensures that meal service areas are always clean, organized, fully stocked, and guest-ready. This role is also accountable for the success of the dish pit station, grab-and-go offering, and take-away services, while maintaining a high standard of service, presentation, cleanliness, and task completion throughout the dining room and assigned kitchen support areas.
This role is well-suited for professionals with strong hospitality backgrounds and experience working in remote camps. The position requires fly-in/fly-out travel from Edmonton, Alberta, the Kitikmeot Region in Nunavut or Yellowknife, Northwest Territories, to project sites in Nunavut or NWT, with potential for weather-related delays or logistical challenges.
Qualifications
Key Responsibilities:
- Supervise the day-to-day operations of the dining room during all meal periods to ensure the area is clean, organized, fully stocked, and ready for service at all times.
- Report directly to the Chef or the designee and support the execution of dining room standards, service expectations, and daily operational priorities.
- Oversee the designated Kitchen Helpers assigned to the dining room and cleaning support duties, ensuring they are in their assigned work areas, understand their responsibilities, and complete all required tasks properly and on time.
- Assign daily duties to designated Kitchen Helpers and dining room support staff, and follow up throughout the shift to ensure work is completed to standard.
- Ensure designated Kitchen Helpers remain in their assigned work areas, follow directions, and complete all assigned duties in a timely and satisfactory manner.
- Take responsibility for the success, appearance, cleanliness, and stocking of the dip station, grab-and-go area, and the take-away areas, ensuring these areas are consistently well presented and guest-ready.
- Monitor product levels in guest-facing food and beverage areas and communicate replenishment needs promptly to the Chef or kitchen team to avoid service gaps.
- Ensure the dining room remains in pristine condition before, during, and after meal service, including tables, chairs, counters, beverage stations, condiment areas, coolers, and other high-touch surfaces.
- Ensure that dining room cleaning and assigned kitchen cleaning are completed by the role holder and the team each shift, and verify that all cleaning tasks meet site standards.
- Conduct routine inspections of the dining room and service areas to verify cleanliness, organization, proper setup, and overall readiness for guest use.
- Support guest service by maintaining an orderly dining environment, addressing routine concerns professionally, and escalating issues to the Chef when required.
- Reinforce expectations with staff through day-to-day coaching, direction, and follow-up to maintain service quality, cleanliness, and accountability.
- Report maintenance, sanitation, safety, or service issues promptly to the Chef and assist in correcting deficiencies within the dining room area.
- Complete basic checklists, shift updates, or other required documentation related to dining room operations, staff task completion, and cleaning standards.
- Perform other related duties as required to support camp food service operations.
Physical Demands:
- Ability to stand and walk for extended periods during service and cleaning activities.
- Ability to lift, carry, push, or pull up to 50 lbs.
- Work is performed in a remote camp environment on a rotational schedule, with site conditions and travel logistics varying by contract.
- Must comply with all company, client, safety, sanitation, and housekeeping standards at all times.
- This position may be considered safety-sensitive and may be subject to pre-employment and site-access requirements as applicable.

Required Qualifications:
- High school diploma or equivalent preferred.
- Minimum 1–3 years of experience in food service, hospitality, cafeteria, buffet, or remote camp service environments.
- Previous experience leading or directing staff in a dining room or service environment is preferred.
- Experience working in a high-volume or remote camp environment is an asset.
- Food Safe, WHMIS, or other site-required certifications are assets and may be required prior to deployment.
Working Conditions:
- Employees are responsible for arranging their transportation to the designated point of dispatch (typically Edmonton, Alberta).
- Fly-in/fly-out position based in a remote Arctic camp, with potential for weather-related travel delays.
- Shared accommodations and meals are provided while on site.
- Extended periods away from home; rotational schedule required.
- Fast-paced food service environment requiring physical stamina and long hours.
- Must comply with all health, safety, and sanitation standards established by the clients and the Dexterra Group.

Work schedule and remuneration:
Laundry Attendants work on a rotational schedule of 3 weeks on/ 3 weeks off. Site locations are in remote settings, requiring either air travel to site, or via ground on our shuttle. You may be required to work nights, weekdays, weekends, and general holidays. Wages are paid on an hourly basis and include a starting rate of $24.50.
