Job Description

Constance Ephelia, our luxury resort destination in Seychelles, is seeking a talented and creative Pastry Junior Sous Chef to join our distinguished culinary team. In this pivotal role, you will support the Pastry Chef in delivering exceptional pastry creations and baked goods whilst leading and mentoring junior pastry staff. You will be instrumental in maintaining the highest standards of quality, innovation, and presentation across all pastry operations within our fine dining establishments.

  • Oversee daily pastry production, ensuring consistency, quality, and adherence to established recipes and plating standards
  •  Develop and execute innovative pastry designs and seasonal menu items, demonstrating creativity and culinary expertise
  •  Supervise and mentor junior pastry team members, providing guidance on techniques, food safety protocols, and professional development
  • Manage inventory, portion control, and cost efficiency within the pastry section whilst maintaining meticulous organisation
  •  Prepare and present complex pastry items including laminated doughs, chocolate work, sugar artistry, and contemporary plating techniques
  •  Maintain rigorous food safety and hygiene standards, ensuring compliance with all health and safety regulations
  • Collaborate with the culinary team to coordinate service delivery and respond to special requests and dietary requirements
  •  Train and conduct induction programmes for new pastry staff, fostering a culture of excellence and continuous improvement
  •  Monitor equipment maintenance and ensure the pastry kitchen remains organised and efficient at all times
  •  Contribute to menu planning and recipe development, bringing innovation and seasonal awareness to pastry offerings

Qualifications

  • Minimum 5 years' professional experience in pastry and baking within a fine dining or luxury hospitality environment
  • Culinary diploma or professional certification in Pastry/Bakery Arts preferred
  •  Proven experience in a supervisory or junior management capacity within a pastry kitchen
  • Advanced proficiency in classical and contemporary pastry techniques, including lamination, tempering, and sugar work
  •  Strong knowledge of baking science, ingredient ratios, and the ability to troubleshoot technical challenges
  •  Demonstrated expertise in pastry plating, presentation, and artistic decoration
  •  Excellent people skills with the ability to lead, mentor, and motivate a team effectively
  • Exceptional organisational and time management abilities, with capacity to manage multiple tasks under pressure
  •  Food safety and hygiene certification or equivalent knowledge
  •  Proficiency with pastry equipment and kitchen technology
  •  Creative mindset with a passion for innovation and menu development
  •  Strong attention to detail and commitment to maintaining the highest quality standards
  • Ability to work flexibly, including early mornings, evenings, and weekends as required in a resort environment
  •  Experience in international pastry techniques and fine dining establishments
  • Knowledge of dietary requirements and ability to create specialised pastry items
  • Experience in staff training and appraisal processes
