Job Description
We are seeking an exceptional Executive Sous Chef to join the culinary team at Constance Ephelia, a prestigious luxury resort in Seychelles. In this pivotal role, you will work collaboratively alongside the Head Chef to oversee all kitchen operations, maintain the highest standards of fine dining excellence, and lead a talented brigade of culinary professionals. Your expertise in fine dining cuisine, combined with your innovative approach to gastronomy and visionary culinary direction, will be instrumental in delivering an outstanding culinary experience to our discerning guests.
- Oversee daily kitchen operations and ensure strict adherence to fine dining standards, food safety protocols, and health regulations
- Develop and execute innovative menus that showcase contemporary and classical culinary techniques, whilst maintaining consistency and impeccable presentation
- Lead, mentor, and appraise kitchen staff with empathy and motivation, fostering a culture of excellence and continuous professional development
- Manage food costs, inventory control, and supplier relationships to optimise operational efficiency and maintain premium ingredient quality
- Collaborate with the Head Chef on strategic culinary direction, seasonal menu planning, and long-term culinary vision
- Train and induct new kitchen team members, establishing best practices, culinary standards, and ensuring comprehensive knowledge transfer
- Coordinate seamlessly with front-of-house staff to ensure exceptional service delivery and guest satisfaction
- Analyse kitchen performance metrics, identify areas for improvement, and implement decisive solutions to enhance productivity and quality
- Source and evaluate premium ingredients with particular attention to locally-sourced and sustainable options that reflect the island's unique offerings
- Maintain rigorous standards of kitchen hygiene, food safety compliance, and transparent communication of all regulatory requirements
- Support and empower kitchen staff through inclusive leadership, demonstrating resilience and flexibility in a dynamic resort environment
Qualifications
- Minimum 5 years' experience working in fine dining or Michelin-starred kitchens in a similar executive position
- Diploma or Degree in Culinary Arts, Hospitality Management, or a related field
- Advanced knowledge of food safety, hygiene standards, and kitchen compliance regulations with relevant certifications
- Strong proficiency in menu development, recipe creation, and culinary innovation
- Excellent people skills with proven ability to motivate, train, and appraise kitchen staff effectively
- Solid understanding of food cost management, budgeting, and inventory control
- Demonstrated experience in fine dining service standards and guest-focused culinary excellence
- Strong focus on guest experience and service excellence
- Proven leadership and team management experience within a brigade structure
- Experience in supplier relationship management and ingredient procurement
- Familiarity with sustainable sourcing practices and locally-sourced ingredient procurement
- Fluency in English; additional languages are advantageous
- Experience working in luxury resort or hospitality environments
- Knowledge of tropical cuisine and island-based culinary offerings
- Flexibility to work in a tropical island setting and adapt to resort operations
- Experience with kitchen performance analysis and KPI tracking
