The CDP manages a specific section of the kitchen, ensuring high-quality food preparation, presentation, and hygiene. They may act as deputy to the sous chef, contribute to menu creation, and maintain order and cleanliness in their area. The role requires culinary expertise, creativity, and the ability to uphold the hotel’s standards.

The ideal Chinese cuisine chef will possess mastery of traditional Chinese cooking techniques and a thorough understanding of all eight major regional cuisines—Sichuan, Shandong, Cantonese, Fujian, Jiangsu, Zhejiang, Hunan, and Anhui. They should be creative and innovative, capable of developing fusion dishes that blend global flavors with authentic Chinese traditions. Strong business acumen, including cost management and leadership skills, is essential, along with excellent communication abilities in both English and Chinese to collaborate effectively with kitchen staff and engage with guests. The candidate must have solid knowledge of food safety standards, including HACCP, and demonstrate continuous learning and adaptability by exploring new ingredients, techniques, and dietary trends to keep the menu dynamic and relevant.
