Job Description

The Commis Sommelier Level 3 executes the daily tasks, which keep the whole team running smoothly on a day-to-day basis.

Duties and Responsibilities:

Responsibilities and duties for this position shall include, but not be limited to, the following areas and activities. 

  • To support the Head Sommelier and the Outlet Sommelier in charge on a day-to-day operation. To achieve the highest standards of cleanliness regarding the Mise en Place and to prepare bottles for service in the restaurant.
  • To perform the Mise en Place as per the Constance Belle Mare Plage Standard Operating Procedures.
  • To help organize and check in deliveries.
  • To participate in the resort wine service as the Head Sommelier wishes whether in any of the restaurants.
  • To follow the mise en place as written by the Sommelier in Charge of outlets
  • To use the Standard procedures for Decanting and Carafing, Wine Service and Cigar Service.
  • To maintain good communications with all other Hotel departments.
  • Assist in the maintenance and organization of the wine cellar, including inventory management and storage.
  • Perform regular stock checks and report any discrepancies to the Head Sommelier.
  • To be familiar with Prolific System and able to make requisition on a daily basics
  • To able to made transfer inter Transfer in Prolific
  • Capable of opening and closing of outlets in His/Her own
  • Daily wine Stock sheet in outlets to be done
  • Able to do wine tasting with guest
  • Provide Training to commis level 1 and 2
  • Check and update wine list on a daily basis

 

Qualifications

Qualification:

  • Middle or Secondary Education + Additional training or certificates in the relevant field is a plus.
  • WEST L2 Minimum or Academy Wine Course Certificate

Experience:

  • A minimum of 3 year of experience in hotel industry on a similar position including training.
  • Proven experience working in a top luxury resorts is a plus.
  • Experience working in remote island locations is a plus.

Technical skills:

  • Smell and developed tastes.
  • Advance knowledge of the wines.
  • Willing To learn and share Knowledge
  • Customer service skills.
  • Fluency in English /French or another language, written and verbal communication.
  • Knowledge of a second language is a plus.
