You will create your own menus and work with the Directors to establish the food offering but based around where you feel it needs to be to achieve awards.
You will have a good stable background and be wanting to use this property as an the next test for your management skills and ability in the kitchen. This is a smart business and you will owner who will see it as a great addition to his team and work with you on the further development of the gastro pub.
