Job Description

This is a Full-time position (40 hrs) - 5 Days (Flex)

Under the supervision of the Food Service Director, incumbent is responsible for ensuring that the proper safety procedures, sanitation and food handling procedures are followed as they relate to the food service department and dietary. He/she is directly responsible for the smooth operation of dietary, which includes training, managing, evaluating, and communicating with nursing when there are issues with trays, residents’ food, dining room service, a residents diet or any other resident concern. Accountable for the discipline of all dietary staff, ensuring that all discipline is given fairly and consistently.

He/she will meet weekly with Broadmead Dietitian to discuss resident food and diet concerns and any other related issues. Also, they will be responsible for having regular meetings with dietary hostess and lead server for feedback and updates. Coordinate all wellspring programs and information to foodservice department. Choose which staff will attend wellspring modules when scheduled. Discuss the implementation of any wellspring programs with Director before moving forward. Will attend monthly resident council meeting or send designee.

Will act as opening or closing supervisor when scheduled and will follow departmental procedures for both positions. Incumbent is responsible for decorating Health Care Dining Room on holidays. Also, is responsible for quality assurance program and inspections of the department with the assistance of the Dietitian.  

Essential Duties:

  • Accountable for the training and supervision of the, Dietary Hostess, lead server and service staff.

  • Accountable for the development and completion of all annual goals.

  • Accountable for creating a pleasant dining atmosphere for residents, their families and guest in the Health Care Dining Room. 

  • Accountable for the timely evaluation of the dietary hostess, lead server  and dietary staff.

  • Accountable for monitoring overstocking of inventory through par list, and the ordering of nourishments to ensure that items are on hand when needed.

  • Accountable for the overall sanitation of Dietary and general upkeep.

  • Accountable for demonstrating effective leadership, maintaining a positive attitude and having commitment to Broadmead.

  • Accountable for staying in budget with all Dietary salaries and for ensuring that work schedules reflect established work patterns.

  • Accountable for being at patient care or sending a designee.

  • Accountable for all in-service training, certifications for hostess and lead server.

  • Accountable for all silverware, china, glassware, uniforms and other supplies for Dietary and will ensure that items are on hand as needed.

  • Accountable for ensuring that Dietary menus, modified spreadsheets, and all special recipes (PABH, Super Cereal, etc.) are completed and posted as needed.

  • Accountable for safety issues, menu changes in Health Care, mandatory in-service training for all dietary staff. 

  • Other duties as assigned by the Director of Food Service.


  • Has the authority to hire, evaluate, discipline and recommend termination for all Dietary Staff. 

  • Has the authority to discipline and recommend termination of all Food Service staff except Food Service Managers.

  •  Has authority to override final decisions of hostess and dietary lead server.

  • Has the authority to ensure within the Food Service Department, that all Broadmead policies and procedures are followed as written.

  • Has authority to approve or request equipment purchases and repairs that relate to Dietary.

  • Has authority to make decisions in any area to ensure the smooth operation of the Food Service Department on his/her weekend. 


  • Must be D.M.A. certified, ServSafe Certification/H.A.C.C.P.

  • Certified Dietary Manager Certification, CFPP

  • 3-5 years managerial experience.

  • Requires at least six years experience, preferably in a similar facility or a combination of college education and experience.

  • Comprehensive knowledge of Food Service management practices, techniques, and procedures.

  • Comprehensive knowledge of food preparations and proper food handling procedures.

  • Comprehensive knowledge of special diets and food exchanges.

  • General knowledge of food merchandising.

  • General knowledge of mathematics.

  • General knowledge of budgeting and accounting principles.

  • General knowledge of computer, i.e. Word and Excel.

  • Knowledge of OSHA regulations, State and Federal regulations and guidelines, Infection Control Standards and H.A.C.C.P.

  • Strong written and verbal communication skills that can be effectively interpreted by those with whom he/she communicates regularly.

  • Ability to give directions and to work independently.
