Job Description

The Sous Chef helps provide operational, training, and managerial oversight for the culinary operations of the Limelight Hotel. They also help prepare and cook food. 

Essential Job Functions
•    Act as restaurant chef in the absence of Chef de Cuisine 
•    Develop, train, supervise, and coordinate with line staff to achieve assigned tasks 
•    Be a role model to others
•    Maintain and promote proper food safety and handling protocol whilst operating a safe & clean work environment 
•    Communicate with Chef de Cuisine regarding the daily inventory and ordering process 
•    Set up their own station and mise en place to Chef de Cuisine specifications and recipes
•    Cook and prepare food to order
•    Properly store all mise en place and submit production needs for following day by shift end
•    Work as an active participant on the service line as required 
•    Assure safe and clean work conditions for all personnel
•    Help maintain cleanliness guidelines for all kitchen production, walk-ins, and storage areas
•    Other duties as assigned

Qualifications

•    Culinary degree or equivalent work experience required
•    ServSafe certification required
•    Basic knowledge of purchasing required
•    1 years of management experience in a culinary environment preferred
•    High volume production experience preferred
•    Excellent written and spoken English required, Spanish preferred
•    Exposure to menu costing, inventory, and ordering

Given:
Exercises general supervision over the culinary team. Assigns a variety of routine tasks, sets general expectations of results expected within company’s policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. 
Received: Works under general supervision of the Chef de Cuisine. Receives continuing or individual assignments according to supervisor’s directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins. 

Work Environment and Physical Demands  
Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended period’s time. Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces. Must be able to constantly lift, push or pull up to 50 lbs. individually or with assistance.
