ASC operates the on-mountain restaurants and the four mountains in the Aspen Snowmass area - Snowmass, Aspen Mountain, Aspen Highlands and Buttermilk - as well as the Five Star, Five Diamond property The Little Nell, the Limelight Hotel properties which operate in Aspen, Ketchum Idaho and Snowmass. ASC also operates the rental & retail stores of Four Mountain Sports as well as the Award-winning Ski & Snowboard Schools of Aspen Snowmass.

Job Description

The Chef Tournant is a mobile position that provides culinary support across the company as directed by the Executive Chef. Must be guest-focused and team focused and believe in putting the comfort and happiness of guests first, doing whatever it takes to deliver fine food, artful presentation, and remarkable hospitality.
Essential Job Functions
•    Assists unit chef in all aspects of kitchen operations, as directed by the Executive Chef
•    Acts as a coach, teacher and trainer to culinary employees
•    Acts as restaurant chef as needed, ensuring smooth and efficient kitchen operation
•    Ensures that food is prepared on time and according to specifications
•    Assists with end of day wrap up, cleaning and closing down of kitchen
•    Maintains excellent food preparation and safety practices
•    Expedites preparation of essential items for service; execution of menu items during service
•    Maintains with Chef de cuisine and Executive chef, cleanliness guidelines for all kitchen production, walk-ins and storage areas
•    Properly stores all mise en place and submits production needs for following day by shift end
•    Supervises employees to achieve assigned tasks according to kitchen standards
•    Communicates any mechanical challenges to the general manager
•    Communicates guest comments and concerns with the restaurant manager
•    Communicates discrepancies from standard with the Executive Chef
•    Attends regularly scheduled weekly Manager/Supervisor Meeting, Kitchen Meeting and (one-on-one) meetings with Executive Chef
•    Ensures that your Manager is aware of guest comments and concerns
•    Assists with inventories as required
•    Assists Chef with assigning duties and scheduling, monitoring performance and productivity, catering events, line cooking management
•    Other duties as assigned

Qualifications

•    Must be 18 years or older
•    Culinary degree or equivalent industry experience required
•    4 years of progressive culinary experience to include supervision or management of employees in a variety of commercial/professional kitchens required
•    Ability to work all stations within a kitchen at a high level of competency required
•    Competent with computer programs such as Microsoft Office preferred
•    Current, valid Driver License with ability to operate a variety of vehicles including stick shift, snowcat, snowmobile preferred
•    Excellent written and spoken English skills; Bilingual English/Spanish is an advantage
•    Ability to ski or ride at an intermediate level is required for employees of ski in/ski out restaurants in winter

Exercises general supervision over kitchen staff. Assigns a variety of routine tasks, sets general expectations of results expected within company’s policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
Supervision Received: Works under general supervision of the Executive Chef. Receives continuing or individual assignments according to supervisor’s directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins. 

Work Environment and Physical Demands:
Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time 
Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces  
Must be able to frequently lift, push or pull up to 50 ) lbs. individually or with assistance (weight limits can vary according to position, but no more than 50)
