Job Description

The Executive Chef is responsible for quality, presentation & cleanliness of culinary operations for a specific restaurant location within the Mountain Dining Division.

This role typically pays around $107,500, actual pay will be dependent on budget and experience, all our salaried roles are eligible for bonus.   

Essential Duties and Responsibilities  

  • Assist in recruiting of culinary teams 
  • Responsible for the training & development of our culinary teams to include sanitation and safety practices 
  • Assist in management of the Snowcat program to ensure consistency of food product and reliable delivery schedules  
  • Conduct regular meetings with culinary teams, providing feedback, recognition & coaching 
  • Implement systems with which to facilitate production of daily needs utilizing available staff and product in the most efficient manner possible 
  • Assist in coordinating the ordering, receiving, transportation and storage of product and supplies between the base area and facility 
  • Review weekly schedules to reflect business demands and budgeted expectations 
  • Accountable for COS (Cost of Sales) and labor costs as they relate to food product and the culinary labor budget 
  • Conduct seasonal culinary audits at each facility 
  • Responsible for the processing of daily invoices through the accounting department 
  • Demonstrates the ability to contribute ideas which lend themselves to development of the divisional food service facilities 
  • Shows ability to adapt to changing trends, both financial and menu related 
  • Demonstrates the ability to develop ideas which will enhance the guest experience aswell as generating additional departmental revenue 
  • Ensure fair treatment of all employees & take coaching action as required 
  • Complete training and obtain ASC snowmobile and/or snowcat certification 
  • Other duties as assigned 

Qualifications

  • Culinary degree or equivalent educational level required 
  • 5 years prior culinary experience required  
  • 2 years supervisory experience required  
  • Competent with computer programs such as Microsoft Office, ChefTec/menu costing software 
  • Excellent written and spoken English, Spanish is an advantage 
  • ServSafe or similar food safety course certification is preferred 
  • Ability to ski or ride at an intermediate level is required for employees of ski in/ski out restaurants

Supervision Given and Received: 
Supervision Given: Exercises general supervision over kitchen staff. Assigns a variety of routine tasks, sets general expectations of results expected within company’s policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. 
Supervision Received: Works under general supervision of the Culinary Director. Receives continuing or individual assignments according to supervisor’s directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins.  
 
Work Environment and Physical Demands 

Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time  
Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces   
Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance.
