Job Description

Summary 
To oversee the operation of the restaurants and bars and provide additional operational support to room service and banquets as needed.  In addition, provide administrative support to the Food and Beverage Director as assigned.

Essential Job Functions
People
•    Responsible for all F&B Managers
•    Plays a key role in the training, development and discipline of staff with input from department managers
•    Operate as Room Service, Banquet, Restaurant and Bar Manager when necessary (manager days off, vacation)
•    Supervise F&B staff in their work, maintaining high performance levels
•    Train, develop and discipline staff with input from department managers
•    Assists in the recruitment and hiring of new employees for F&B
•    Communicate with staff regularly
•    Seek out staffs’ opinion for improving operations
Product
•    Oversee daily operations of Element 47 Restaurant, Ajax and Chair 9
•    Responds to guest complaints immediately and in a professional manner
•    Responsible for conducting daily inspection of F&B operational areas and storage facilities, providing the F&B Director with a daily report identifying problems and listing action taken to fix problem
•    Conduct weekly departmental walkthroughs and follows up to ensure cleanliness and organization remain a priority in all front of house and storage areas
•    Enforce and upgrade service standards, procedures and policies
•    Assist in planning and executing all special holidays and functions
•    Act as a liaison between F&B and other departments when exploring new business opportunities, creating P&Ls, business plans, etc. to analyze viability of new amenities, products, services
•    Constantly benchmarking our operation vs. other leading hotels and restaurants
•    Meet with F&B Director weekly to inform of progress on given projects and to determine future assignments
•    Attend and contribute input to bi-weekly staff meetings and weekly food and beverage meetings
•    Recommend purchases to the F&B Director, keeping up with industry trends and making improvements for the division
•    Complete reports, projects and paperwork as assigned on a timely basis.
Profit
•    Responsible for liquor and beer costs, storing and distribution procedures for the division, reporting any discrepancies to the Food and Beverage Director
•    Assist in the budgeting process and long term planning for all F&B operations
•    Provide monthly recap of financial performance of the division 
•    Monitor labor costs for food and beverage operations, report variations to F&B Director
•    Identify revenue generating and expense saving opportunities and implement programs once approved by F&B Director
•    Implements and oversees sales incentive programs impacting overall F&B revenue
•    Conduct monthly menu and sales analysis to ensure maximize revenue opportunities based on pricing and menu mix
 
Additional Job Duties

•    Complete tasks and projects delegated by your Supervisor
•    Assist other departments as business volumes and staff levels demand
•    Report to work in a neatly groomed and acceptable manner as outlined in the employee handbook and departmental rules
•    Report to shift on time
•    Enforce and comply with all policies and procedures for the Food and Beverage Department, The Little Nell and the Aspen Skiing Company

Qualifications

•    4-year hotel degree preferred
•    5 years progressive Food and Beverage Managerial experience in all Food and Beverage operations preferred
•    Strong wine knowledge, knowledge of food and cooking methods, ability to work well with people, strong organization and supervisory skills, good public relation skills, professional appearance
•    Must be fluent in English
•    Must have the ability to work with numbers
•    Must be able to handle a multitude of duties and to work well under high levels of stress

Supervision given and received 
Given: Exercises general supervision over The Little Nell Food & Beverage Department. Assigns a variety of routine tasks, sets general expectations of results expected within company’s policies and procedures. Responsibilities include but are not limited to, interviewing, hiring, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
Received: Works under general supervision of the Director of Food & Beverage. Receives continuing or individual assignments according to supervisor’s directions and may perform routine tasks. Expectations of the quality, quantity and deadlines are clearly set. Instructions, advice and assistance available as needed. Work is reviewed on demand or during scheduled check-ins.

Work Environment and physical demands 
•    Ability to be on your feet, kneel and bend for extended periods of time 
•    Regularly work in adverse conditions and requiring the use of protective apparel/equipment to prevent exposure to the elements as well as an office environment and may be required to walk on slippery and uneven surfaces
•    Must be able to lift, push or pull occasionally up to 50 lbs. individually or with assistance (weight limits can vary according to position, but no more than 50)
