Job Description

Position Summary: This is a working PM supervisor position that provides leadership for all personnel in the PM restaurant department and PM banquet functions.  Establishes and maintains food and beverage standards of quality and service ensuring these remain the highest in the industry. Act as an ambassador for the hotel by taking care of our guest’s needs and providing them with information about local area attractions. Serve food and beverages to our guests in a welcoming environment while keeping the buffet, tables, and kitchen area clean, well stocked and maintained. Complete daily dinner set up and breakdown according to hotel standards and set up for next morning and afternoon breaks for group business. Promotes hospitality and adheres to all department policies and procedures in a safe, accident-free manner.

Qualifications

Service Standards: 
Eye contact should be made at a distance of no less than 10 feet from every guest.
A genuine smile should be offered at a distance of no less than 5 feet from every guest.
Employees should build rapport with guests during any conversation, if the guest responds to the initial statement with a conversational demeanor.
Guest last name is used effectively, but discreetly, as a signal of recognition as least once and not more than twice during any conversation with guests.
Before concluding conversations, the guest is verbally offered additional assistance with a statement relevant to the guest’s individual needs.
 
Essential Functions of the Job :
Report for work neatly groomed and in accordance with the employee grooming policy.  Be responsible for the grooming of on-shift employees as outlined in the employee handbook and further developed in the departmental rules.
Set up and break down the daily breakfast buffet.  Keep the dinner area maintained to the highest standards during service hours.
Basic baking skills.
Bus guest tables in a timely manner.
Wash dishes and serving ware.
Daily inventory and restocking of dishes, glassware and food items.
Supervise dinner service, ensuring that staffing is appropriate and notifying management as needed. Delegate to servers and work as an active member of the dinner staff. 
During hours of service continuously keep the dining room clean and stocked to include but not limited to: bussing and wiping down guest tables, washing and polishing dishes, restocking all food and beverage items in a timely manner. 
After breaking down the daily dinner service, thoroughly clean the lobby to include wiping down all tables, and arranging the furniture to its proper location. 
Greet guests entering the lobby immediately with a friendly and sincere welcome. Respond to inquiries with appropriate action and provide accurate information regarding hours of operations, direction to local attractions, meeting rooms and airport shuttle service, luggage assistance etc. according to the guest’s individual needs.
Be familiar with all current events and activities in Snowmass/Aspen area, i.e. social, cultural historical and physical attractions.
Communicates daily with F&B Manager, ensuring any urgent requests or issues are brought to light immediately.
Interface with other managers and supervisors outside F&B to establish communication lines for processing and amending inter-hotel concerns.
Strong attention to service and presentation standards in the dinner and banquet outlets.
Assist in development of procedures, operating criteria and standards of performance for all areas directly supervised.
Assist in planning the weekly schedule on time.
Maintain an active presence in the dining room during peak times and to cover days off.
Plan and oversee catering and banquet events during the day.
Take a visible leadership role towards hotel guests.
Must possess tact and polish required to interact with community leaders, hotel guests, etc.
Places twice a week food order for the dinner department based on pars and special needs.
Responsible for conducting daily walk through inspection of Food and Beverage operational areas and storage facilities, providing the F&B Manager with a daily report identifying problems and listing action taken to fix problem.
Supervise Food and Beverage staff in their work, maintaining high performance levels.
Develop and coach staff with input from department managers. Recommend corrective action as needed. 
Conduct daily meetings (line ups) and contribute training and role play examples.
Assist in planning and executing all special holidays and functions.        
Attend all Banquet Event meetings.
Monitor labor costs for food and beverage operations, reporting variations to Food and Beverage Manager.
Maintain accurate records of banquet revenue and labor costs, providing a month end report to Food and Beverage Manager.
Stay up to date regarding changes/cancellations of banquet functions & events.
Communicate with staff regularly.  Seek out staff’s opinion for improving operations.
Recommend purchases to the Food and Beverage Manager.
Complete reports, projects and paperwork as assigned on a timely basis.
Assists the Food & Beverage Manager with payroll information regarding schedule changes, missed punches & adding alternate job codes.
Adheres to confidentiality agreement.
Work with all areas of the F&B departments to include: dinner, banquets and lounge.

Additional Job Duties :
Complete tasks and projects delegated by your Supervisor and assist other departments as business volumes and staff levels demand.
Report to work in a neatly groomed and acceptable manner as outlined in the employee handbook and departmental rules.
Report to shift on time.
Enforce and comply with all policies and procedures for the Food and Beverage Department, The Limelight Hotel and the Aspen Skiing Company. Report to shift on time.
Is familiar with hotel fire and safety procedures. Assist in emergency and security procedures as directed by management.
 
Physical requirements of this position include:
Able to stand high levels of stress.
Works 95% standing and 5% sitting (administrative work). Standing, walking, sitting, carrying, pushing, pulling, climbing, stooping, kneeling, crouching, reaching, handling, keyboard operations, talking, hearing and seeing.
Able to lift 40lbs and push/pull up to 100lbs, moving boxes of food, and banquet carts, tables, chairs, etc. 
 
Education, Experience, Skills :
High School Diploma, College education preferred.
4 year hotel degree preferred.  
Extensive knowledge of food and cooking methods, ability to work well with people, strong organization and supervisory skills, good public relation skills, professional appearance.
Must be fluent in English.
Must have the ability to work with numbers.
Must be able to handle a barrage of duties and to work well under high levels of stress.
